They say the way to a man’s heart is through his stomach.  To me, this means cheese.  I’ve come to believe that cheese is basically the key to a man’s heart.  But you know what?  Women like food, too.  And what food do women swoon over? 

You guessed it.  Wine and chocolate.

And I do mean both together.  If you have both, it’s a magical thing, is it not? 

The other cool thing about combining the two here (plus some raspberries, of course) is that you’ll be hard-pressed to find a dude who isn’t head over heels for it, either.  I mean, it’s so dang amazing that it could probably stop all thought and speech for a few minutes.

It’s been that kind of a week, my friend.  I haven’t been here for you like you deserve.  It’s likely you’ve been on the edge of your seat just wondering if I finally ended up turning into a pie, or doing something better, like going on a world tour to visit the best cupcake shops and indoor cycling classes ever.  Actually, I’ve been right here, and am still not a pie – despite the old “you are what you eat” adage.

Port Reduction Cheesecake Squares

Throughout all the culinary classes I took a couple years ago, I never heard of anything that sounded fancier than “port reduction.” 

It’s really just a syrup made of a sweet fortified wine… but it actually tastes as fancy as it sounds.  (Which is good, or else it I think it’d be something of a letdown.)  Still, it’s as easy a sauce as you can make, being only one ingredient, and you can put it in or on anything dessert-like!

With such an ingredient, I decided it should be part of a dessert that embodied total, all-out, fanciness.  You know, as opposed to halfhearted fanciness.  Because anyone could make a port reduction and put it on… fro yo or something… but a cheesecake would make it simply extended-pinky-worthy.
