I came home for lunch the other day, starving.  I looked in my fridge… and found practically nothing in edible form.  Fortunately, I was armed with a few ingredients, modern technology, and an idea.

The resulting Cheesy Turkey Meatballs that I pulled out of my oven about 20 minutes later are actually quicker, healthier, and more delicious than just about anything I could have gotten elsewhere at that moment.  Plus, now they’re ready to grab for a meal or snack any old time I need it! 

Easy meal prep is so fun.

I’m sure you’re with me – making healthy food should not be hard!  These days, we no longer have to hunt down a wildebeest, coax a sweet potato out of the earth, make a clay pot, or start a fire in a cave during a snowstorm.

I’m not saying you can’t do those things if you really want to, but… it’s really not required.

These words from the mythological Oracle of Delphi couldn’t be more apt today.  Know ourselves.  What a concept!  It’s very simple, but totally profound.

We often try to force ourselves into a mold in some way or another.  Think about it:  We’ll often go after many diet plans, fitness regimens, clothing styles, and even behavior patterns that aren’t really… us.

And, while, obviously, we don’t have to be totally out there and non-conformist to be individuals, respecting certain little things about ourselves can make a huge difference in our productivity and progress.

For me, this has meant coming to understand what I need to do to see changes within myself, fitness-wise, while drawing from fundamental knowledge about health and fitness. 

It really has been a lot of trial and error.  And obsessing.  And scrutinizing.  But once you figure out what works for you – and I’m here to help you make that process easier! – you can really live the rest of your life feeling happy and confident about your health choices!  How liberating is that??

Friends, it has been about three years since I began blogging about food, fitness, and how cute baby elephants are when they run. 

Wait – not the last one.  That’s just something I was thinking about just now.  But, hey - aren’t they? 

Right.  It’s been just about three years since I started this blog.  I’ve enjoyed sharing my discoveries in the kitchen with you, most of which involve experimenting with strange and foreign ingredients (ie., yogurt, almond flour, avocados, etc.) to “magically” make delicious things healthy.

If you’ve stopped by before, you probably know that I sprinkle in health/fitness tips here and there among my recipes.  This is because the world would obviously be a better place if chocolate and health were not mutually exclusive.
