Let me just start off by saying that matcha green tea is one of God’s great gifts to humans.  As humans, we tend to be imperfect and, as a result, reliant on what resources we are given to thrive.  In our imperfection, though, we often seek out the stuff that provides us with instant gratification rather than long-term vitality.

(And, yes, I say this as I am eating cheese-flavored popcorn.  I’m just a weak human?)

But, in some cases, we can get that instant gratification (think caffeine boost) with benefits that can help clean up our act, health-wise (think antioxidants).

I’m going to start this roundup post with three facts about myself:

One.  A good portion of my ancestry is Irish.  I don’t personally know any of the family that still lives there, but I listen to Celtic music a lot, as if it will bring me back to my roots.  (“Celtic” is legitimately a Pandora station I created and saved as the homepage of my computer.)

Two.  I spent two lovely weeks in Ireland in June of 2011.  I saw so many happy looking people and animals there.  I could practically live on the dense, grainy bread we ate everywhere we went.  And I did kiss the Blarney stone.

Zucchini-Chai Tea Cake

I almost called this a coffee cake.  Silly me.  Of course this is not a coffee cake.

It’s made with tea and it goes best with tea.  Clearly, it has to be called a tea cake.

Once you’ve tried a bite, I think you’ll agree that this is an important statement – the chai tea makes all the difference in this cake, which might otherwise be called zucchini bread, or something more average-sounding.
