Sweet Potato-Pesto Hash Stuffed Peppers with Cashew Cream

When food catches me off guard by being extremely delicious, I find it much more gratifying than if I had been prepared for it to be that good.  That’s what makes seeking out new restaurants and constantly creating new recipes so appealing to me.  And it is what made my trip to Prasad an eye-opening and revitalizing experience, reminding me of how completely satisfying a well-prepared vegan meal can be.

Spoiler alert: the food I ate there inspired this recipe!

Last week, I took my first solo vacation.  It was to somewhere I’d never been, but had always wanted to go – Portland, Oregon.  

I think my expectations of the city had just been accumulating over time, from friends who had visited some of the many epic breweries there, or whose aunts cultivated massive personal gardens in the area, from magazine articles touting the burgeoning culinary scene, and even quirky TV shows that poked fun at the laid-back hippy/hipster vibe Portland is reported to exude.

Blackberry Cheesecake-Topped Sweet Potato Cakes

Chances are, you haven’t tried sweet potatoes and blackberries together.  So chances are, you just haven’t lived.

Sure, that could be a slight overstatement, but with everything going on in this one little dessert I feel it’s totally acceptable if I err on the dramatic side.

For one thing, this combination of flavors is a wonderous, yet unnecessarily rare occurrence.  By the time spring rolls around, we’ve all but forgotten about sweet potatoes altogether, as healthy and tasty as they are.  They never so much as share a crisper drawer with a fresh blackberry.  Conversely, in late fall, there isn’t a fresh berry in sight, so we decide it must, therefore, be impossible to eat one.

Alright, the neighborhood Iron-Chef competitions aren't a thing.  Yet.  Still working on that... let me know if you're in the area, we'll totally make this happen.

Still, there is going to be - maybe there already is - more leftover food taking over the fridge than you imagined possible.  I always feel like somehow it multiplies on its own... I mean, I couldn't really have cooked all that in the last 24 hours, could I?  I'm sure at some point I would have realized there are only two people living in my house...

11 Kid-Friendly Recipes

Got any wishes for Christmas this year?
Is it a full-on, legitimate, letter-to-Santa list?  Or is there just ONE thing you really want and everthing else may as well be pencil-shavings in comparison?
Things I've wished for, for Christmases past include:  Polly Pockets, American Girls Dolls, an encyclopedia (I was eight and this request prompted my Dad to introduce me to the "Internet" and Brittanica.com), a pony, and an Easy Bake Oven (Got it! Have since graduated to the big kids' oven.)
This year some of the "things" on my list are not actual things.  And I think that's totally acceptable, especially as a grown-up, to have lists of Christmas wants that do not take up more space in your life.  True?
