Last week, I shared with you my Garden Quinoa Salad – a delightfully fresh take on quinoa that was basically made as a pairing to summertime – and now I’m ready with another one!  Just like they say about Reese’s peanut butter cups and Oreos, there is really no wrong way to eat quinoa.

This lovely, lovely little grain – well, seed, actually – can go with anything, and is a good source of complete, vegan protein.  Plus, when you make a big batch of quinoa ahead, you have a base for your meals all week if you want! Let’s talk about our feelings.  Namely, how do you feel about eggplant?  Personally, I feel that it may be one of the most underrated, misrepresented vegetables out there. 

Eggplants have gotten a bad rap, like asparagus and broccoli, for being over- or undercooked too many times in home-cooked-meal memory.  That, and the fact that eggplant doesn’t have a ton of its own flavor, it can easily seem like the bottom of the veg-chain when it comes to picking ones to eat.

It’s not every day that you get to dunk food into paint and call it art.  Thus, the reason dying Easter eggs is such great fun for kids – and heck, adults, too! 

As a kid, though, my sister and I used to get pretty fancy with our egg designs.  No big deal, but… they were kinda awesome.  (Our white table was proof of all the colors we used for days afterward.)  But, you know, food art can’t last forever, so when it came time to dismantle the masterpieces, we had to make new creations out of the old ones.

Let's talk for real right now.

Like, I could totally sit here and be okay with just sharing this yummy salad with you and telling you how you should get into it.  I mean... you SHOULD try it.  That's why I made it for you, after all.  Well, actually, I made it for me and then realized it was definitely worth sharing... but same difference.

All the things I'm loving right now put in one big bowl.  That is this salad.  Since I made the butternut squash ahead of time, it took me about 5 seconds to put this together.  It also just so happens that all these ingredients are really helpful with reducing body fat and satisfying hunger!  True facts.  

As great as that is, we can't be done there today.

I want to be up front and real with you.  I think we should talk about about some of the interesting stuff I learned on my recently accomplished "journey" as a first-time bikini competitor.
