Easy Thin-Crust Pizza {Low-Carb!}

Conundrum:  How to deal with carb-cravings when you’re trying to stick to a low-carb diet (or just eat less carby junk in general)? 

Technically, going to a bakery and inhaling deeply for five minutes contains zero carbs, and is super delightful.  On the downside, cravings often seem to increase after this, and when so near the main concern, this can be problematic.

Distracting oneself with kitten videos is usually less of an issue in the short run.  Still, it doesn’t take long for hunger pangs to come back, which need to be addressed some way or another…

Which brings me to the real solution.  Have pizza.  Low-carb, quicker than delivery, delicious, satisfying pizza, that is.

Did you know:  Asparagus is technically a type of grass? 

Yep.  It’s an extremely delicious, edible, versatile type of grass.  A wonder-grass, if you will.  And this month, May, is officially Asparagus month!

11 Kid-Friendly Recipes

Got any wishes for Christmas this year?
Is it a full-on, legitimate, letter-to-Santa list?  Or is there just ONE thing you really want and everthing else may as well be pencil-shavings in comparison?
Things I've wished for, for Christmases past include:  Polly Pockets, American Girls Dolls, an encyclopedia (I was eight and this request prompted my Dad to introduce me to the "Internet" and Brittanica.com), a pony, and an Easy Bake Oven (Got it! Have since graduated to the big kids' oven.)
This year some of the "things" on my list are not actual things.  And I think that's totally acceptable, especially as a grown-up, to have lists of Christmas wants that do not take up more space in your life.  True?

Oven Roasted Tomato Sauce

Currently, I’m reading another of Michael Pollan’s books, Cooked, in which he talks about one of my favorite subjects – you guessed it – cooking.  At the beginning of one of the chapters, he asks, rhetorically of course, “Is there anyone alive who actually enjoys chopping onions?”

And honestly, if anyone does… it isn’t me.  Oh, I’m okay with zoning out and getting a little “Zen” with my cooking, as he puts it – it’s not the drudgery of chopping that gets me.  It’s just that my poor eyeballs can’t stand it.
