Let’s talk about our feelings.  Namely, how do you feel about eggplant?  Personally, I feel that it may be one of the most underrated, misrepresented vegetables out there. 

Eggplants have gotten a bad rap, like asparagus and broccoli, for being over- or undercooked too many times in home-cooked-meal memory.  That, and the fact that eggplant doesn’t have a ton of its own flavor, it can easily seem like the bottom of the veg-chain when it comes to picking ones to eat.

Beefy Artichoke Dip Salad (+ Easy Roasted Broccoli)

Is it possible to eat too much broccoli?

The answer is yes.  Yes, you can eat too much broccoli.  Broccoli is a cruciferous vegetable - which are famous for being extra healthy... and extra hard to digest.  Tummy troubles can outweigh the nutritional benefit at a certain point.

And I am not cool with this fact.  I love broccoli, like, a lot.  If I've compared my love of fruit to that of a fruit pterodactyl, my feelings for broccoli are probably the same if not stronger. 

I think raw broccoli stems, chopped up and plain, are simply delicious.  Raw broccoli tops dipped in hummus are a delicacy.  Roasted broccoli straight out of the oven, with coconut or olive oil and garlic sprinkled across it - pure crack.  Even cold, the next day, straight out of the refrigerator, I'll munch on that shiznit like potato chips.

Zucchini Linguini with Goat Cheese Sauce

I have been like a little kid playing with Christmas gifts today.  I have a new little mandolin slicer I’ve been trying out on some zucchini (not on my fingers!) and a new camera I now kleek kleek all over the place.  So much fun! 

With a mandolin in my possession, zucchini had to be the first thing to try out.  Nice perfect slices make for great salad or pizza toppings, or, interestingly, noodles.  Pseudo-noodles.  Even if you just have a vegetable peeler, I’d say it is definitely time to give this veg-linguini a chance.
