For a while, when I was trying to cut down on animal products, I simply ate less meat without giving much thought to my protein intake.  But, as I found out, that approach can make you pretty hungry!  And Steve was not a fan of my frequent hangry days.  Courtney SMASH!

I knew you'd know because you already know how I love spicy food.  Give me chicken and waffles and I'll pass on the syrup and ask for the hot sauce.  Spaghetti and meatballs?  Crushed red pepper is a must!  Heck, I'll put tabasco on my salsa.  (Well... only if it's mild salsa!)

This dish seems to be inspired by a few different things.  It’s like fifty percent summer farmer’s market, fifty percent Chipotle, and fifty percent Sandra Lee’s Semi-Homemade.  I didn’t do the math, but I think that works.
