I came home for lunch the other day, starving.  I looked in my fridge… and found practically nothing in edible form.  Fortunately, I was armed with a few ingredients, modern technology, and an idea.

The resulting Cheesy Turkey Meatballs that I pulled out of my oven about 20 minutes later are actually quicker, healthier, and more delicious than just about anything I could have gotten elsewhere at that moment.  Plus, now they’re ready to grab for a meal or snack any old time I need it! 

Easy meal prep is so fun.

I’m sure you’re with me – making healthy food should not be hard!  These days, we no longer have to hunt down a wildebeest, coax a sweet potato out of the earth, make a clay pot, or start a fire in a cave during a snowstorm.

I’m not saying you can’t do those things if you really want to, but… it’s really not required.

In a perfect world, there would be no tough decisions.  Mint chocolate chip or rocky road?  Hiking or swimming?  The pink or the teal dress?  Sweet or savory?

(Some real toughies there, huh?  Okay, but you know what I mean!)

Still, it may be argued that having some challenging decisions make life more interesting and spicy.  Well, for better or worse, we do have options in life, but today I’m telling you to have it all.  At least as far as this particular salad goes.

I would like to take a moment to thank chicken.

I know I love a lot of types of foods.  I know I aim to eat a mostly plant-based diet.  But chicken – chicken has really helped me get through some tough times.  I don’t know how I would have made it without you, chicken.

Why chicken?  Well, in the recent past, as you may know, I participated in my first bikini competition.  I shared a lot about my preparation, thoughts, and experience with it in a series of posts, but what I ultimately took away from the whole shebang was a new personal perspective on diet and exercise.

5 Fabulous St. Patrick’s Day Recipes {Healthified!}

I’m going to start this roundup post with three facts about myself:

One.  A good portion of my ancestry is Irish.  I don’t personally know any of the family that still lives there, but I listen to Celtic music a lot, as if it will bring me back to my roots.  (“Celtic” is legitimately a Pandora station I created and saved as the homepage of my computer.)

Two.  I spent two lovely weeks in Ireland in June of 2011.  I saw so many happy looking people and animals there.  I could practically live on the dense, grainy bread we ate everywhere we went.  And I did kiss the Blarney stone.
