Eggs.  Nature's perfect prepackaged food.  Protein, healthy fat, vitamins, antioxidants + minerals we need, all wrapped up in a tiny 70-calorie container.

Eggs are so great, that in the last 300 million years or so since they were invented, the best  food to come out has been sliced bread.  And that's only because "the best thing since sliced bread" is a good bit more fun to say than "the best thing since eggs."  Don't dispute me on this - this statement is illogically indisputable, and you will become confused and frustrated if you try.

Yep.  I'm sure we're all in agreement that eggs are a good thing.  

I mean, let's face it - they keep us full longer than toast, they've got the protein we need to get buff (or whatever), and they're perfect as a vehicle for all kinds of other healthy things!

Perfect Low-Carb Protein Pancakes (and a day in my bikini prep diet!)

If anyone asked me how I prefer my eggs done, I'd have to say in pancake form.  

Don't judge.  I just have a sweet tooth first thing in the morning!  Let's call it a girl thing...  Or a me thing.  Whatever.

So, of course, the natural thing to do was to give in and start making fluffy pancakes with bacon and berries for my first meal of the day.  Right?

Is that butter?  Why yes it is!  Real butter.

Those are real pancakes, too.

Three strips of bacon were involved, too, but they didn't make it long enough to hit the plate.

And, in case you were wondering, yes, I am still preparing for a bikini competition coming up in 6 weeks!

Okay, fine, I'll stop teasing you.  

I previously shared my delicious pumpkin or sweet potato pancakes here.  Topped with berries, this was a great recipe!  Paired with butter and bacon, and I could have a nutritional dilemma on my hands.   Hence, new pancakes with less carbs.

Ain't nobody got time for that!
A phrase often applied to healthy eating on the daily.  
And not without reason, I might add.  Always eating, as recommended by many health gurus,  the freshest possible food with the most nutritional value, paired with other foods that boost the nutrition of whatever "superfood" you've gotten your hands on this time (and prepared in an at least semi-appetizing manner) can be... a chore, at times.
I mean, sure, there's always frozen food... or prepackaged food... or the occasional health-food-on-the-go... but that's not always the tastiest or most cost-effective of ways to do it, is it?  Like... have you ever eaten a salad from a fast-food joint?  C'mon, we can SO do better!
Well then, what are we left with?  To streamline our refrigerators and force healthy to be friends with easy!

Super Sweet Potatoes

I hope you enjoyed the Cashew-Pecan Crusted Chicken from last week – it’s already a classic hit at my house! 

You better believe it will be back around often.  And, you may have noticed, to tempt you a bit I got this Super Sweet Potato in the picture as its snazzy sidekick.  It was incognito, though, because this one is the real superhero of the meal!  Sure, the protein usually gets all the praise and recognition, but this “side” dish has way more goin’ on than just the bit of healthy carbs and fat you see in the nutritional stats. 

Each of these little guys are a nutritional powerhouse ready to help your body with some of the heavy lifting that you don’t even want to have to think about – like your immunity and digestion and such.
