Easy Thin-Crust Pizza {Low-Carb!}

Conundrum:  How to deal with carb-cravings when you’re trying to stick to a low-carb diet (or just eat less carby junk in general)? 

Technically, going to a bakery and inhaling deeply for five minutes contains zero carbs, and is super delightful.  On the downside, cravings often seem to increase after this, and when so near the main concern, this can be problematic.

Distracting oneself with kitten videos is usually less of an issue in the short run.  Still, it doesn’t take long for hunger pangs to come back, which need to be addressed some way or another…

Which brings me to the real solution.  Have pizza.  Low-carb, quicker than delivery, delicious, satisfying pizza, that is.

On top of basghettiiiiiii, all covered with cheeeeeese, there lay my poor meatbaaaall, till somebody… Um, hello, ate it up because it was delicious! 

These meatballs will not be wasted by sneezing on them and subsequently allowing them to roll out the door and getting smashed by grandma’s horse-and-buggy, or whatever it is happens to runaway meatballs.

No, these meatballs are going to stay happily near their spaghetti, keeping the most dynamic of childhood-dinner duos firmly together.  And the spaghetti and meatballs that lay under the perfect sauce together, stay together.  Of course, it follows that those that stay together, grow up together, too.

Zucchini Linguini with Goat Cheese Sauce

I have been like a little kid playing with Christmas gifts today.  I have a new little mandolin slicer I’ve been trying out on some zucchini (not on my fingers!) and a new camera I now kleek kleek all over the place.  So much fun! 

With a mandolin in my possession, zucchini had to be the first thing to try out.  Nice perfect slices make for great salad or pizza toppings, or, interestingly, noodles.  Pseudo-noodles.  Even if you just have a vegetable peeler, I’d say it is definitely time to give this veg-linguini a chance.
