'Tis the season for family gatherings and good food!  Unfortunately, for many of us, it’s also the season for sniffley noses and baggy eyes… Precisely the time for a bit of a nutritional pick-me-up.

I’ve personally been noting the seasonal transition by the number of people around me with colds and the increasing difficulty of getting out of bed at a “reasonable” time.  It doesn’t help that I’m overcompensating with caffeine to the point that I can’t sleep properly at night, simultaneously exacerbating my problems with getting stuff done and avoiding the plague that the masses keep bringing around.

My schedule also just hit the fan.  I just picked up a brand new job, a 100-mile (two hour) long drive from my other one…

Almond Joy Shortbread Cookies

I’ve been doing some thinking, and I’ve come to a conclusion.

Chocolate and coconut go REALLY well together!

I mean, right?  But that was actually only one of my conclusions – it was the one that distracted me (in a really tasty way) from a more important thought I had first.

I love to bake… because I enjoy creating something that makes other people happy on so many levels.  As I was giving away a bunch of these Almond Joy Shortbread Cookies to a cycling class I just taught (oh, my gosh, they totally love treats after class!) I had this feeling they were so well-appreciated for more than the obvious tasty-factor.

I hadn’t stopped to think about it in depth before, but it’s really true.

No-Bake Chocolate Power Truffles

The dog ate my homework.  Well, actually, I spilled my oatmeal on it, and then the dog ate the oatmeal off it, so now it’s just ruined.  I mean, it fell on the floor first… See, my oatmeal was just sitting on the corner of my homework, and my homework was attached to my sleeve, so when I went to walk away they both fell on the floor.  Why was it attached to my sleeve?  That’s another story, but I was babysitting the other day…

So maybe the dog ate the homework.  Or maybe it’s just easier to say that than what really happened.  Either way, the homework isn’t here.  It was supposed to be… only it isn’t.

According to the New York Times, a third of people who make New Year’s resolutions have already broken them by this month.  That’s a lot of people who had their dog eat their homework.  Or whatever their particular case is.  And, far from blaming anyone, I can see how it happens.  First of the year or not, it’s nearly impossible to just wake up one day and do everything completely different.

Roasted Brussels Sprouts w/ Pomegranate & Hazelnuts

"I can't believe I never used to eat Brussels sprouts before!" 
    - My Husband

One Thanksgiving, probably about three years ago, my sister-in-law made a simply amazing roasted Brussels sprouts dish.  Neither my husband or I could remember ever having eaten Brussels sprouts - certainly not like that, at least - so it was basically a life-changing experience.  Insofar as Brussels sprouts can be life-changing, at least.

Ever since then, I've been using Brussels sprouts every chance I get, using them raw [LIKE THIS!] or roasted, by themselves or with other veggies/ cheeses/ ingredients.  And (nearly) every time I make them, my husband says something along the lines of the above quote.  

Yep.  He even goes back for seconds on the veggies.  (Husbands eating veggies... it's a miracle, I tell ya.)  Someday maybe I'll be lucky enough to have kids that say the same thing.  Fingers crossed.
