Let’s talk about our feelings.  Namely, how do you feel about eggplant?  Personally, I feel that it may be one of the most underrated, misrepresented vegetables out there. 

Eggplants have gotten a bad rap, like asparagus and broccoli, for being over- or undercooked too many times in home-cooked-meal memory.  That, and the fact that eggplant doesn’t have a ton of its own flavor, it can easily seem like the bottom of the veg-chain when it comes to picking ones to eat.

We all have our family traditions.  And traditions are the stuff of childhood memories and the center of every holiday gathering, no?  So when it comes to traditional recipes within the family, there are certain ones that you just know are going to stick around.  You know, for better or worse.

 

I love my mom’s traditional New Year’s Lemon Bundt Cake.  That one is for the better!  I swear I’ll never get sick of seeing that one come around. 

My grandma also has this adorable tradition of bringing olives and sweet gherkins (little pickles) to every holiday.  That one is a good one in my book – just because it’s a very my-grandma thing and, of course, brings back all kinds of childhood memories. (Ahem… eating pitted olives off my fingertips!)

There is one though, that comes around every Easter, and - let’s be honest:  We could all really do without!

Oh, wait… you’re reading this.  Please continue what you’re doing then.  But consider with me a moment what life will be like for you three years from now. 

If you’re in school, maybe you’ll be done and moving on to a new job.  If you have kids... they’ll be three years older.  (That can be a scary thought in itself, I’m sure.)  Maybe you’ll have a book published or have won the Nobel Peace Prize.  A lot can happen in three years.

Good moment we had, there. 

Now I can segue into this other crazy fact about three years.  Today my husband and I are celebrating our third wedding anniversary.  Whoaaa… mind blown.  Three years seems like a long time!  Even longer when you consider we’ve actually been a couple for FIVE years now.
