Sweet Potato-Pesto Hash Stuffed Peppers with Cashew Cream

When food catches me off guard by being extremely delicious, I find it much more gratifying than if I had been prepared for it to be that good.  That’s what makes seeking out new restaurants and constantly creating new recipes so appealing to me.  And it is what made my trip to Prasad an eye-opening and revitalizing experience, reminding me of how completely satisfying a well-prepared vegan meal can be.

Spoiler alert: the food I ate there inspired this recipe!

Last week, I took my first solo vacation.  It was to somewhere I’d never been, but had always wanted to go – Portland, Oregon.  

I think my expectations of the city had just been accumulating over time, from friends who had visited some of the many epic breweries there, or whose aunts cultivated massive personal gardens in the area, from magazine articles touting the burgeoning culinary scene, and even quirky TV shows that poked fun at the laid-back hippy/hipster vibe Portland is reported to exude.

All of it made me want to go.

I have a little present for you.  It’s sweet, it’s tart, it’s a little pink, and it looks like… a doughnut!

Technically, that’s because it is a doughnut.  I mean, your taste buds will certainly agree with that statement, but your body won’t have the sugar freak-out and your stomach won’t get all growly 5 minutes later like they normally would with a doughnut. 

The reason?  For one, there is more fiber in these doughnuts.  Made with whole wheat flour and fruit, they’ll keep you satisfied longer.

We all have our family traditions.  And traditions are the stuff of childhood memories and the center of every holiday gathering, no?  So when it comes to traditional recipes within the family, there are certain ones that you just know are going to stick around.  You know, for better or worse.

 

I love my mom’s traditional New Year’s Lemon Bundt Cake.  That one is for the better!  I swear I’ll never get sick of seeing that one come around. 

My grandma also has this adorable tradition of bringing olives and sweet gherkins (little pickles) to every holiday.  That one is a good one in my book – just because it’s a very my-grandma thing and, of course, brings back all kinds of childhood memories. (Ahem… eating pitted olives off my fingertips!)

There is one though, that comes around every Easter, and - let’s be honest:  We could all really do without!
