No-Bake Carob Brownie Bites

Even though I made the recipe up from scratch, somehow, I still couldn’t tell they weren’t chocolate.

Not chocolate?  Whoever heard of a brownie that wasn’t made with chocolate?  Not me, at least, until very recently, when I decided to try giving it up.  Not exactly my idea of fun!

Chocolate didn’t get the boot because of Lent, or because it’s inherently, sinfully, bad for me (like the mayor in one of my favorite movies, Chocolat would think,) but simply because it is a bean.  A seed, really.  But, for the sake of my wellbeing, that was enough of a reason. 

However.  That was NOT enough of a reason not to have fudgey brownies.  We all got to have a little sanity, people, and this stuff does it for me! 

While trying, as much as possible, to stick to the Autoimmune Protocol as I’m still unsure of the origins of my current inflammation issues, I’m opening up to trying even more ingredients than ever before!  It has been a tasty adventure so far, my friend.  (Check these AIP-friendly recipes out…)

Chewy {Gluten-Free} Chocolate Chip Cookies

When you’re on a quest for something truly good, it’s never enough to settle for your first option.

I mean, like when you REALLY want a chewy chocolate chip cookie to dunk in your coffee, can you actually be 100% happy with something that came from a box?

For me, boxed cookies can’t even compare.  It’s like the difference between a high-res photograph of a beautiful sunset and a flip phone picture… of that first picture.

I’m not trying to be pretentious, I just appreciate something with real ingredients that came from an actual oven sometime in the last day.  You know?

Speaking of real, I doubt there could be any more real culture and art than in a place like here in Seattle.  Oh, wait, did I forget to mention I’m visiting Seattle?  Well I’m here for the first time, and it’s been quite a grand old time so far.

Mini Churro Cupcakes

Great things come in many sizes.  The Great Wall of China, for example, is super-duper large, while the key to a penthouse suite is a speck in comparison.

Not all great things are alike, of course, but the fact that we perceive something as great is what’s important.  Don’t you think?  I can’t compare food to the Great Wall of China, but then again, you can’t eat the Great Wall of China.

Really, what I’m trying to say is that these teeny little cupcakes, after a few trial-and-errors, have finally come to be something totally great in my world!  They’re just SO fluffy and cinnamon-y.

When I was developing the recipe for these, I was inspired by a friend of mine at this fantastic little sandwich cafe called Latin it Up (here in Tucson,) to try to make a Latin-ish dessert.  I’m not Latina, and I’ve never made flan, but I love churros!  Anything cinnamon is just the best.

Since churros are typically fried, I wanted to create something a little more in line with my healthy cooking tendencies.  Hence, baked churro cupcakes!
