Dear Mom,

I think that even though you deserve thanks and appreciation every day, Mother’s Day is one day to make extra sure you hear it.  So this is a letter from me to you, letting you know how much you really mean to me.  Hopefully the fact that everyone else on the internet can read it, too, makes you proud for having such a thoroughly unashamed daughter.  Or maybe you’ll at least laugh a little.

I would like to take a moment to thank chicken.

I know I love a lot of types of foods.  I know I aim to eat a mostly plant-based diet.  But chicken – chicken has really helped me get through some tough times.  I don’t know how I would have made it without you, chicken.

Why chicken?  Well, in the recent past, as you may know, I participated in my first bikini competition.  I shared a lot about my preparation, thoughts, and experience with it in a series of posts, but what I ultimately took away from the whole shebang was a new personal perspective on diet and exercise.

Easy Egg Salad Sandwich Stuffing (Tuna, Salmon, or Chicken!)

We all have our family traditions.  And traditions are the stuff of childhood memories and the center of every holiday gathering, no?  So when it comes to traditional recipes within the family, there are certain ones that you just know are going to stick around.  You know, for better or worse.

 

I love my mom’s traditional New Year’s Lemon Bundt Cake.  That one is for the better!  I swear I’ll never get sick of seeing that one come around. 

My grandma also has this adorable tradition of bringing olives and sweet gherkins (little pickles) to every holiday.  That one is a good one in my book – just because it’s a very my-grandma thing and, of course, brings back all kinds of childhood memories. (Ahem… eating pitted olives off my fingertips!)

There is one though, that comes around every Easter, and - let’s be honest:  We could all really do without!

Happy Monday!

No, I am not being sarcastic.  It’s true I’ve never been the biggest fan of Mondays.  I’m actually more of a Tuesday person.  But it IS a happy Monday, because I had a really great weekend. 

Still not following?  Well, think about it.  When you have a really great weekend – and by really great weekend I mean spending lots of time with friends and possibly indulging in a wee cheat meal or two – Mondays are always going to be there for you.  And by there for you, I mean to whip you into shape.

Mondays are the no-nonsense, power-suit, tight hair-bunned day if there ever was one.  Mondays would be called Helga.  Helga does not accept sloppiness.  You will tell Helga you’re ready to come back to reality and do better this time and continue to improve.
