Protein Peanut Butter-Banana Tartelettes

“If you’re gonna eat cheesecake, why not just eat cheesecake?”

Is a familiar question heard among healthy food bloggers across the country (or so I imagine) when confronted by foodies who either haven’t yet tried “alternative” versions of their favorite desserts, or have had an off-putting experience with such things.

Being that the first prepackaged vegan cookie that I ever knowingly ate was gummy and bland, I certainly didn’t have the #1 perspective on vegan baking right off the bat.  It took me trial, error, and Chocolate Covered Katie recipes to figure out that simply eggs and milk do not a cookie make.  A good cookie really just needs good ingredients!

Which is why I get the skepticism.  But if you love to bake, love to have little treats, and you still want to do right by your body as much as humanly possible, simply using great ingredients just might save you from diving into THAT cheesecake.

This cheesecake is one smooth operator, I have to say.  One bite and you totally forget that you just made the angelic version of a devilish dish.  It just seems too naughty to actually be full of protein and not full of sugar.

I really just can’t shake it – I think I’ve already made this five whole times – even before I’ve even given up its delicious secrets at all.  That’s really unusual!  Despite my love for you and my respect for your baking needs, I guess I’ve been keeping this one all to myself.

Blackberry Cheesecake-Topped Sweet Potato Cakes

Chances are, you haven’t tried sweet potatoes and blackberries together.  So chances are, you just haven’t lived.

Sure, that could be a slight overstatement, but with everything going on in this one little dessert I feel it’s totally acceptable if I err on the dramatic side.

For one thing, this combination of flavors is a wonderous, yet unnecessarily rare occurrence.  By the time spring rolls around, we’ve all but forgotten about sweet potatoes altogether, as healthy and tasty as they are.  They never so much as share a crisper drawer with a fresh blackberry.  Conversely, in late fall, there isn’t a fresh berry in sight, so we decide it must, therefore, be impossible to eat one.
