Flourless Cake - A protein recipe with a twist!

Flourless Cake - A protein recipe with a twist!

Happy New Year!

I am not dead, and though it was quite a year, I did make it through 2018 - albeit without one single post on this page. It feels kind of sad to admit, but 2018 was a very busy year of not too much fun kinds of cooking or baking, and the most notable things I made were just sort of impressive ways to combine all the random things I had in my pantry or freezer.

Which reminds me, I could have probably posted one of my two renditions of tamale casserole (in which I used up 4 leftover holiday tamales by chopping them up and combining them with riced broccoli, beans, turkey meat, enchilada sauce and cheese to make a somewhat healthier dish that still paid homage to the tamale) or shown you how the majority of my “meal prep” lately has consisted of frozen vegetables and precooked frozen chicken, thrown together with a few spices and possibly a bit of cheese (though not the most thrilling to look at, very easy and reasonably tasty.)

But honestly, the whole reason I have not been posting anything is just that I have been SO dang busy. And sometimes just really tired from being so busy.

However, also in 2018…

Flourless Lemon-Orange Coffee Cake

Flourless Lemon-Orange Coffee Cake

I have a cat and a dog.  They're adorable.  Furballs that poop and shed, but adorable and loveable nonetheless.

That's as close as I have gotten to motherhood, and from what I understand, there is a lot more involved in parenting than making sure that your "baby" gets outside and has plenty of belly rubs.

You probably know where I'm going with this.  It's Mother's Day this coming Sunday, and it's always the least I can do just to acknowledge that I know nothing of the trials my wonderful mom went through for me, and to say THANK YOU, ever so much for going through them.  I don't even deserve any of it, but she did it all out of wonderful, motherly love.

My mom taught me how to be a kind person, how to cook, and how to not also eat the mud pies I made as a toddler.  I'm so glad I make better things than mud pies now.

Best-Ever Cake Doughnuts

Best-Ever Cake Doughnuts

They say that the best defense is a good offense.

To me, this means being prepared for anything.  Like knowing that you can use one single recipe to make something for basically any situation.

Sunday brunch at your place?  Doughnuts.

Baby shower?  Mini cupcakes.

Birthday party?  Frosted cake.

Oh, wait, someone’s on a diet?  What, they’re giving up sugar?  No gluten?

Okay, sure!  Good thing THIS recipe doesn’t need those kinds of things to be absolutely bomb.

So now you can be that person that always seems to have something delicious and ready to go on every occasion.  Trust me, this makes you very popular!

Not Your Nana’s Tres Leches Cake

Not Your Nana’s Tres Leches Cake

Much like schnitzel-eating, bull-riding, and caber-tossing, tres leches cake-baking is not a tradition that my family has ever held.

However, once I was introduced to the concept of the delicious, drenched, sweet cake, I was hooked!  It is almost like what you get when you top a cake with ice cream, and let the ice cream melt into it for a bit.  It’s just too tasty!

But, as I do with all good recipes, I had to tweak it and make it my own.  And add chocolate, of course, because tomorrow is National Chocolate Day!

That’s why this is not your Nana’s tres leches cake – albeit with the highest respect to all Nanas out there with their awesome, traditional, tres leches recipes.
