No-Bake Carob Brownie Bites

Even though I made the recipe up from scratch, somehow, I still couldn’t tell they weren’t chocolate.

Not chocolate?  Whoever heard of a brownie that wasn’t made with chocolate?  Not me, at least, until very recently, when I decided to try giving it up.  Not exactly my idea of fun!

Chocolate didn’t get the boot because of Lent, or because it’s inherently, sinfully, bad for me (like the mayor in one of my favorite movies, Chocolat would think,) but simply because it is a bean.  A seed, really.  But, for the sake of my wellbeing, that was enough of a reason. 

However.  That was NOT enough of a reason not to have fudgey brownies.  We all got to have a little sanity, people, and this stuff does it for me! 

While trying, as much as possible, to stick to the Autoimmune Protocol as I’m still unsure of the origins of my current inflammation issues, I’m opening up to trying even more ingredients than ever before!  It has been a tasty adventure so far, my friend.  (Check these AIP-friendly recipes out…)

The almighty leg day seems to scare some people to the point that they only work their upper body and end up looking like top-heavy triangles.  They’re afraid of the fact that leg day is the toughest day of the week – when you do it right.  But, of course, this is exactly why we should WANT to do leg day!

Leg muscles are the biggest muscles you have, and therefore, the more you work them, the more calories you will burn throughout your workout, and even at rest!  And you know, if you like looking lean and reasonably toned (or even ripped!) getting those legs worked is just the thing.

A Reason to Cook {+ Fun Baking Giveaway!}

As a kid, I remember that the smell of homemade cookies coming out of the oven always made me – well, it kinda made me want to run in and eat all the cookies – but it also made me proud.

My mom taught me how to cook and bake things from scratch at a young age.  I’d always pull out all the bowls and ingredients, and then we’d pick out a recipe (usually oatmeal raisin cookies if I had my way,) and go through the steps together.  Sometimes the cookies would even take the shape of teddy bears or hearts – if the teddy bears were aliens and the hearts were more anatomically correct, that is.

So even though I wasn’t necessarily an excellent artist with my baking, it always made me feel sooo accomplished.  Like doing-the-monkey-bars-one-handed accomplished.  It was an excellent thing to know that I’d instigated the magic that went on in that oven.

Most Fudgy + Chocolate-y Brownies Ever {+ Chocolate-y Giveaway!}

Friends, it has been about three years since I began blogging about food, fitness, and how cute baby elephants are when they run. 

Wait – not the last one.  That’s just something I was thinking about just now.  But, hey - aren’t they? 

Right.  It’s been just about three years since I started this blog.  I’ve enjoyed sharing my discoveries in the kitchen with you, most of which involve experimenting with strange and foreign ingredients (ie., yogurt, almond flour, avocados, etc.) to “magically” make delicious things healthy.

If you’ve stopped by before, you probably know that I sprinkle in health/fitness tips here and there among my recipes.  This is because the world would obviously be a better place if chocolate and health were not mutually exclusive. 

I mean, have it all, why don’t you?  That’s not too much to ask.
