Rhubarb Chevre & Peanut Butter Cookie Icebox Bars

All I know is these are something different.

I had a really hard time deciding what to call them, because they’re like half cheesecake and half ice cream bar…. and half peanut butter and jelly sandwich.

They’re also high in protein, gluten-free, low-carb, and can’t really be eaten without a fork.

So what do you call that?

I guess the only thing that could sum it all up without being in paragraph form was Rhubarb Chevre & Peanut Butter Cookie Icebox Bars.  So there you have it.

To me, this is the dessert-embodiment of all the best things.  All the flavors and textures of my favorites went into this, sans the sugar-overload I would rather avoid but with the metabolism-boosting, muscle-fueling protein I need for my training!

It kinda even gives me a sneaky satisfaction at the thought of thwarting the traditional “sweets-are-bad-for-you” train of thought.

These are something different, all right!  But in this case, different really just means delightful!  Don’t you think?

And just like that, summer as we knew it was gone.  With it went 95-degree swimming pools, driving free of 15-mph school crosswalk zones, and the long days that woke you up at 5 am and allowed 8 pm to look early enough for happy hour.  At least, that’s how we in the valley of Arizona could tell that fall had taken summer’s place. 

But, despite the lack of hard evidence for seasonal change, Arizonans are known for fiercely taking the concept of fall into their own hands. 

Fall decorations begin to appear in and on homes from the very second August is over.  The scent of apple-cider air fresheners wafts through the air.  Everyone is simply rabid for pumpkin spice lattes… and, well, anything “pumpkin” at all.

Sometimes, the entire first 15 minutes of my morning is spent lying half-awake in bed.  I’m trying to pretend there’s no such thing as having to get out of bed and be an adult.  Also wishing for the cat to have a snooze button.

This morning though, I got right up, stretched, put on my Fitbit (can’t let my family win!), made some coffee (to become a whole person), heated a couple of these delicious things for my hubby’s breakfast, and then whipped up a batch of Peanut Butter-Raspberry Swirl Bars.

Um, did you catch that?  All of that was the first 15 minutes of my day.  Quite possibly the first 10.

{Healthy} Mint Chocolate Cream Pie

Have you ever tried to find the end of a rainbow?  Somehow it always disappears as you get close.  It’s almost like it’s a trick of the light or something…

So I don’t know if there’s ever been a pot of gold sitting at the end of a rainbow, but that’s what they say.  I’ll let you know if I ever see one in person. 

In the meantime, I’ll still consider myself pretty lucky if I happen to have a panful of something both chocolatey-delicious and absurdly healthy in the house.  It’s like getting a guilt-free pass to have dessert every night for an entire week.
