Let me just start off by saying that matcha green tea is one of God’s great gifts to humans.  As humans, we tend to be imperfect and, as a result, reliant on what resources we are given to thrive.  In our imperfection, though, we often seek out the stuff that provides us with instant gratification rather than long-term vitality.

(And, yes, I say this as I am eating cheese-flavored popcorn.  I’m just a weak human?)

But, in some cases, we can get that instant gratification (think caffeine boost) with benefits that can help clean up our act, health-wise (think antioxidants).

Frozen Lemon Bars

Frozen Lemon Bars

Right now, all I can think about is how long I have until I can eat this frozen lemon bar. 

It’s a little square of wonderful, all tart and creamy and delicious, but it’s just slightly too frozen to eat at the moment.  It’s sitting in a bowl on my porch warming up.  I set a timer for ten minutes, but of course I won’t forget about it… I’ve been checking every two.

Anyway, can you see my dilemma?  I’m sitting here, trying to write about these lemon bars, hoping to be inspired by eating one… and instead I’m being distracted by just thinking about eating one.

Anything with lemon, together with a little coconut and banana, couldn’t be more perfect for a summertime dessert, but when it’s also frozen… that’s on a whole new level. 

In this recipe, the coconut flour crust comes out almost like a graham cracker crust.  It’s just slightly sweet and crumbly, which I think is pretty great with a creamy textured filling.  The lemon filling has a really awesome lemonade-like flavor, and I’m definitely into that right about now.  Even though the base is mainly bananas and coconut oil, those flavors seem to enhance the lemon flavor rather than dominate it.

Protein Peanut Butter-Banana Tartelettes

“If you’re gonna eat cheesecake, why not just eat cheesecake?”

Is a familiar question heard among healthy food bloggers across the country (or so I imagine) when confronted by foodies who either haven’t yet tried “alternative” versions of their favorite desserts, or have had an off-putting experience with such things.

Being that the first prepackaged vegan cookie that I ever knowingly ate was gummy and bland, I certainly didn’t have the #1 perspective on vegan baking right off the bat.  It took me trial, error, and Chocolate Covered Katie recipes to figure out that simply eggs and milk do not a cookie make.  A good cookie really just needs good ingredients!

Which is why I get the skepticism.  But if you love to bake, love to have little treats, and you still want to do right by your body as much as humanly possible, simply using great ingredients just might save you from diving into THAT cheesecake.

It’s Monday, and this week is off to a raging start.  Or, rather… the opposite of that.  It’s past noon and I still haven’t gotten one dang recipe up for you yet.  (Oh, here it is!)

I suppose this is what happens when you spend all day Sunday baking like a crazy person – three brand-new recipes and photos in one afternoon can leave you a little exhausted!  Plus, I’ve been running around teaching Zumba classes and going to local foodie events, which you know, I just can’t miss!
