Flourless Cake - A protein recipe with a twist!

Happy New Year!

I am not dead, and though it was quite a year, I did make it through 2018 - albeit without one single post on this page. It feels kind of sad to admit, but 2018 was a very busy year of not too much fun kinds of cooking or baking, and the most notable things I made were just sort of impressive ways to combine all the random things I had in my pantry or freezer.

Which reminds me, I could have probably posted one of my two renditions of tamale casserole (in which I used up 4 leftover holiday tamales by chopping them up and combining them with riced broccoli, beans, turkey meat, enchilada sauce and cheese to make a somewhat healthier dish that still paid homage to the tamale) or shown you how the majority of my “meal prep” lately has consisted of frozen vegetables and precooked frozen chicken, thrown together with a few spices and possibly a bit of cheese (though not the most thrilling to look at, very easy and reasonably tasty.)

But honestly, the whole reason I have not been posting anything is just that I have been SO dang busy. And sometimes just really tired from being so busy.

However, also in 2018…

Mini Churro Cupcakes

Mini Churro Cupcakes

Great things come in many sizes.  The Great Wall of China, for example, is super-duper large, while the key to a penthouse suite is a speck in comparison.

Not all great things are alike, of course, but the fact that we perceive something as great is what’s important.  Don’t you think?  I can’t compare food to the Great Wall of China, but then again, you can’t eat the Great Wall of China.

Really, what I’m trying to say is that these teeny little cupcakes, after a few trial-and-errors, have finally come to be something totally great in my world!  They’re just SO fluffy and cinnamon-y.

When I was developing the recipe for these, I was inspired by a friend of mine at this fantastic little sandwich cafe called Latin it Up (here in Tucson,) to try to make a Latin-ish dessert.  I’m not Latina, and I’ve never made flan, but I love churros!  Anything cinnamon is just the best.

Since churros are typically fried, I wanted to create something a little more in line with my healthy cooking tendencies.  Hence, baked churro cupcakes!

Spoiler Alert: My Cookbook is Out!

Spoiler Alert: My Cookbook is Out!

Ever get that feeling of being totally owned by your schedule?  Kind of like being tied to the back of a rampaging gorilla that’s really not cool with you being tied to its back?

Sometimes this feeling occurs to me.  It probably means I need a self-help book on time management.

Anyway, this is the part where I announce to you the wonderful reason I’ve been so terrible at posting anything consistently for a while…

Ladies and Gentlemen, I am so very pleased to announce that today marks the official date that my very first cookbook is released!

YAY.

I know I’ve been talking about it a bit, but this is kind of a lifelong dream come true here!  And I can tell you, it’s only the first big thing I’ll do this year.

(Also – today 1/12/16 is the last day… but you can still enter to get my book FREE through this page here!)

When it comes to baking, there are three kinds of people:  The holiday-and-birthday baker, the constantly-in-the-kitchen kind, and the weekend warrior.  I’m sure you already know which one you are, don’t you?

Let’s take a poll right now!  Tell me in the comments which type you are and why!  Are you baking this weekend at all?  It seems like a baking weekend to me – but then again, almost any day could be a baking day for me!  I’m definitely the constantly-in-the-kitchen kind.  Maybe that’s partly because I’m in the middle of writing a cookbook (a protein powder-based cookbook, due out next year!) but also because I really just can’t stop trying new things in the kitchen!
