I wanted to share with you one of my favorite brands, because they make delicious things that can help you stay on your healthy eating goals when you are out of the house or having a really busy week!  And baby, you better believe I'm with you on that need!

I always try to get 10-30 g of protein with every meal or snack, to keep me full and energized throughout the day.  It also helps my muscles rebuild after a workout.  I’m tough on them, but they repay me for my effort with a better metabolism!

Still, when it comes to getting my protein throughout the day, I find it easier to do if it’s in the kind of food I’m craving at the moment.  If you’re thinking I’m taking about fried chicken… well, okay, I do like crunchy-crusted chicken, too – but I often find myself wishing for something sweet!  This is where my favorite protein pancakes come in handy, Quest bars if I’m running around or traveling, and now… breakfast-ready cinnabuns!

Cinnabuns like this are so nice for weekdays, because they are quick to grab and eat, they take care of my sweet tooth (that I seem to get first thing in the morning), and they go super well with coffee.  Have I ever mentioned how much I looove coffee?  I mean… I don’t have a problem…

Anyway, I went through several trials for these soft, super-high protein, buns… so I hope you like them!  Feel free to try different flavors of Quest bars in the buns and in the frosting – and let me know how they turned out!

Protein Cinnabuns

{makes about 11 buns}

Ingredients:

  • 6 oz nonfat plain Greek yogurt
  • ¼ c. unsweetened applesauce (or pumpkin puree)
  • ¼ c. egg whites
  • 1/3 c. unsweetened almond milk
  • 2 scoops (70 g) protein powder (I used a whey/casein/egg protein blend – choose your favorite in a vanilla or cinnamon-flavor)
  • ¼ c. stevia powder (or sugar/ other sweetener)
  • 3 T. coconut oil, melted (or butter/ other oil)
  • 1 c. whole wheat flour (pastry flour is best)
  • ¼ c. flax seed meal
  • ½ tsp. cinnamon
  • ¼ tsp. salt
  • 1 ½ tsp. baking powder
  • ½ tsp. baking soda

  • 1 cinnamon bun Quest bar
  • 2 tsp. water
  • 2 tsp. maple syrup (I used Walden farms calorie-free pancake syrup)
  • 1/8 tsp. cinnamon

Frosting:

  • 1 vanilla almond crunch or coconut cashew Quest bar
  • 4 oz reduced fat cream cheese
  • 1 T. maple syrup (I used Walden farms calorie-free pancake syrup)
  • Optional: sprinkle of cinnamon and/or ½ tsp. vanilla extract
  • * makes enough frosting for 12 muffins

Directions:

Preheat the oven to 350 degrees.  Coat a muffin pan with cooking spray.

Combine yogurt through stevia powder in a mixing bowl with a whisk.  Melt the coconut oil and then pour into the bowl, whisking the yogurt mixture as you pour in the coconut oil (to prevent the coconut oil from solidifying in the colder ingredients.)

Add the remaining dry ingredients through baking soda and gently mix in with the wet ingredients until just combined.

Scoop the batter into 11 of the muffin tins.

In a small, microwavable bowl, heat the cinnamon bun Quest bar for about 20-30 seconds.  Mix in the cinnamon, water, and syrup, to make a thick, frosting-like consistency.

Divide the Quest bar mixture among the 11 buns.  Use a knife or chopstick to swirl the quest bar mixture into the top of each bun.

Bake the buns for 16-18 minutes, or until the tops are slightly browned and the inside is just baked through. (These can easily over-bake and dry out, so watch closely.)

Meanwhile, prep the frosting by microwaving the vanilla Quest bar and cream cheese for about 30 seconds.  Whisk together with the syrup & optional ingredients (if using.)

When the buns are done, remove to a wire cooling rack.  Frost and serve the buns immediately, OR keep the frosting in the refrigerator until ready to serve!

Nutrition per bun (made with calorie-free sweetener): 138 calories; 6 g fat (3 g saturated); 13 g carbs (2 g sugar); 4 g fiber; 10 g protein

Per bun with 1/11 batch frosting (with calorie-free sweetener): 180 calories; 9 g fat (5 g saturated); 15 g carbs (2 g sugar); 6 g fiber; 13 g protein
