I am not dead, and though it was quite a year, I did make it through 2018 - albeit without one single post on this page. It feels kind of sad to admit, but 2018 was a very busy year of not too much fun kinds of cooking or baking, and the most notable things I made were just sort of impressive ways to combine all the random things I had in my pantry or freezer.

Which reminds me, I could have probably posted one of my two renditions of tamale casserole (in which I used up 4 leftover holiday tamales by chopping them up and combining them with riced broccoli, beans, turkey meat, enchilada sauce and cheese to make a somewhat healthier dish that still paid homage to the tamale) or shown you how the majority of my “meal prep” lately has consisted of frozen vegetables and precooked frozen chicken, thrown together with a few spices and possibly a bit of cheese (though not the most thrilling to look at, very easy and reasonably tasty.)

But honestly, the whole reason I have not been posting anything is just that I have been SO dang busy. And sometimes just really tired from being so busy.

However, also in 2018, I received a shipment of this great Grass-Fed Whey protein by Naked Nutrition, a company that is totally dedicated to providing the most natural, high-quality, no-filler protein out there. It seems that they realized I was interested in protein powder and natural ingredients! So when they asked me if I would do a blog post in regards to how I felt about their supplements, I enthusiastically said yes! I thought, this is great - I get to try a new kind of protein powder AND have motivation to get posting again.

Once I tried Naked Whey I really wanted to do the product justice. In the past, doing a good post always meant spending hours devising a recipe, testing it, photographing it in good midday light, and then writing everything out on the blog. I kept feeling guilty that I didn’t seem to have the time for that anymore. So long story short…ish - here we are, in 2019, and I am starting it off right by sitting down and just getting. things. done!

So, my verdict on Naked Whey! (They gave me a matcha whey and a “Less Naked Whey” which just means it had vanilla and coconut sugar in it along with the pure whey.) I really liked them both! I loved first and foremost that their mission is to deliver an absolutely excellent product, and I quote their website, use “careful manufacturing processes to create a non-denatured whey loaded with essential amino acids, glutathione, and clean protein. Naked Whey isn’t dressed up with additives like artificial flavors or sweeteners like most brands, and we are committed to shortening the steps between our farms and you.” How cool! I am totally behind all of that.

Beyond that, the product tastes clean - obviously not artificial or sickeningly sweet - and I usually enjoyed it in my Greek yogurt with berries. They didn’t pay me to say this, I just really appreciate what they are doing, and that the protein powder actually made me feel really good about using it - sometimes I can feel so icky about where things are sourced and what things are in powdered supplements!

Finally… moving on to the part where there I used the protein powder in this recipe! This is my ALL-TIME GO-TO recipe for baking! Do not take this lightly - I only bake things that are SUPER easy and SUPER impressive anymore. I don’t have time for anything else! This recipe is so tried and so true that I didn’t have to worry if it would work for you - it’s coming to you right out of my cookbook Protein Powder Cooking - with a couple small modifications. (There are so many other good recipes in that book too of course!) The protein powder really did this cake justice, adding just one more level of natural, whole-ingredientedness to it!

I bake this cake for events, for birthdays, for holidays, as a gift for people…. literally all occasions! I just made it again last night and mmmm. So good. My apologies for these phone pics here, but it should give you the idea! Happy baking - and let me know how yours turn out! <3

Flourless Cake!

  • 1 (15 oz) can chickpeas, rinsed and drained

  • 1/2 cup vanilla protein powder (I used vanilla Less Naked Whey)

  • 1/2 cup almond flour (or can grind nuts in a coffee grinder to make flour)

  • 1/4 cup coconut oil (other oils or butter may be substituted)

  • 1/4 cup applesauce

  • 1/3 cup sugar (either brown, white, or sugar substitute may be used)

  • 1/3 cup erythritol (or use other sweetener)

  • 3 Tablespoons ground flaxseed

  • 1 tsp vanilla extract

  • 1/2 tsp salt

  • 3/4 tsp baking soda

  • sprinkles to top if you feel so inclined

Directions:

  1. preheat the oven to 350 degrees F.

  2. place all ingredients in a food processor and blend it all thoroughly, scraping sides once or twice to make sure it is well blended and smooth

  3. spray a 8X8 metal cooking pan (glass may be used but possibly will need to bake a little longer)

  4. transfer the batter to the prepared cooking pan and place in the oven

  5. bake your amazing cake for 20-30 minutes depending on your particular oven and pan!
