When you’re on a quest for something truly good, it’s never enough to settle for your first option.

I mean, like when you REALLY want a chewy chocolate chip cookie to dunk in your coffee, can you actually be 100% happy with something that came from a box?

For me, boxed cookies can’t even compare.  It’s like the difference between a high-res photograph of a beautiful sunset and a flip phone picture… of that first picture.

I’m not trying to be pretentious, I just appreciate something with real ingredients that came from an actual oven sometime in the last day.  You know?

Speaking of real, I doubt there could be any more real culture and art than in a place like here in Seattle.  Oh, wait, did I forget to mention I’m visiting Seattle?  Well I’m here for the first time, and it’s been quite a grand old time so far.

I’ve gotten to see Pike Place Market, the first Starbucks, and a cloud-covered sky, so I’ve gotten most of the basics of my tourist-initiation down by now.  Along the way, I’ve also seen some of the most beautiful flower arrangements and smelled some of the most gloriously fragrant pastries I can imagine, and wonderfully creative artwork of every kind is always a few feet away.

I’m only going to be here for a few more days, but I’m trying to make the most of one of America’s great cities.  Can you guess how I’m getting the full experience right now? 

If you said drinking coffee and typing on my laptop in a café, you’d be totally correct.

This little local shop right off of Pike’s Place Market feels completely authentic and unpretentious and real.  I’m pretty sure the croissants are made next door and the coffee beans are locally roasted.  At least that’s the feeling I get.

Just like I came all this way to get that feeling, the effort it takes to make a really good, chewy, delightful chocolate chip cookie is worth it for that feeling you get when you take a bite.

By the way, these ones are actually good for you, too!  I hope you love every melty little bite.

Chewy {Gluten-Free} Chocolate Chip Cookies

Gluten-free {makes about 28 cookies}

Ingredients:

  • ½ c. butter, at room temperature or slightly melted
  • ¼ c. pumpkin puree or unsweetened applesauce
  • 1 c. stevia or erythritol (or your favorite sweetener)
  • ½ c. brown sugar or alternative like coconut sugar
  • 1 whole egg
  • 1 T. vanilla extract
  • 1 1/3 c. oat flour*
  • ½ c. brown rice flour
  • ¼ c. tapioca flour (or arrowroot starch)
  • 2 T. ground flax seed
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • ½ c. dark chocolate chips

*use gluten-free certified if you have a severe reaction to any gluten

Directions:

  1. Preheat the oven to 350 degrees F.
  2. Combine butter through vanilla using a whisk or mixer in a medium bowl. 
  3. Add in remaining ingredients and use a rubber spatula or spoon to combine everything completely.
  4. Use a small 1” scooper to drop rounded balls of cookie dough onto cookie sheets coated in cooking spray.
  5. Bake about 10 minutes, or just until barely done.  Remove immediately to a wire rack to cool and enjoy hot or at room temperature!
