I came home for lunch the other day, starving.  I looked in my fridge… and found practically nothing in edible form.  Fortunately, I was armed with a few ingredients, modern technology, and an idea.

The resulting Cheesy Turkey Meatballs that I pulled out of my oven about 20 minutes later are actually quicker, healthier, and more delicious than just about anything I could have gotten elsewhere at that moment.  Plus, now they’re ready to grab for a meal or snack any old time I need it! 

Easy meal prep is so fun.

I’m sure you’re with me – making healthy food should not be hard!  These days, we no longer have to hunt down a wildebeest, coax a sweet potato out of the earth, make a clay pot, or start a fire in a cave during a snowstorm.

I’m not saying you can’t do those things if you really want to, but… it’s really not required.

Come on, you can do it! Meal prep isn't that difficult. Come over and find out how to do it better at!

Nowadays, you can be grateful for things like grocery stores and ovens that help you out so you can practically think of healthy food and eat it before the hangry-munchies set in.

Cooking quick and healthy meals is really not a big holy ordeal, but unfortunately I don’t think this is common knowledge.

Cheesy Turkey Meatballs

Cheesy Turkey Meatballs {+ Printable Meal Planner} |

High-protein, low-carb, gluten-free

Makes about 20 (1-ounce) meatballs


  • 1 pound ground turkey
  • 1/3 c. shredded Monterey Jack (or any!) cheese
  • 2 cups baby arugula, chopped
  • 2 eggs
  • 1 ½ T. tomato paste
  • 3 T. ground flaxseed


  1. Preheat the oven to 400 degrees F.
  2. Prep two baking sheets by coating with cooking spray. 
  3. Mix all ingredients thoroughly together in a large bowl, using the best tool you have – your hands!  (Just be a clean human, and wash them well before touching anything else!)
  4. Scoop out 1/8 cup portions (or close to that size) and distribute evenly across the baking sheets.
  5. Bake for about 18 minutes. (Internal temperature should be 165 F. when done.)

Nutrition per meatball: 52 calories; 3.2 g fat; <1 g carbs; 5.5 g protein
