They say the way to a man’s heart is through his stomach.  To me, this means cheese.  I’ve come to believe that cheese is basically the key to a man’s heart.  But you know what?  Women like food, too.  And what food do women swoon over?

You guessed it.  Wine and chocolate.

And I do mean both together.  If you have both, it’s a magical thing, is it not? 

The other cool thing about combining the two here (plus some raspberries, of course) is that you’ll be hard-pressed to find a dude who isn’t head over heels for it, either.  I mean, it’s so dang amazing that it could probably stop all thought and speech for a few minutes.

There are real, scientific reasons for this, but at the moment, these are all the facts you need to know. 

Anyhow, it’s Monday, and of course Mondays can feel a little bit more gloomy than other days, so this is just the pick-me-up we need.  That, and the fact that tomorrow is Cinco de Mayo (unless you like Cinco de Cuatro, too, Arrested Development fans.)

Red Wine & Chocolate Raspberry Tart

gluten-free {makes 16 pieces}

Ingredients:

  • ½ c. red wine
  • ---------
  • ½ c. oats
  • ¼ tsp. salt
  • 1 ½ T. cocoa powder
  • 6 pitted dates
  • 2 T. red wine
  • ¼ c. raspberries, fresh or frozen + thawed*
  • ---------
  • 2 large eggs
  • ½ c. liquid egg whites
  • ½ c. raspberries, fresh or frozen + thawed*
  • 1/3 c. powdered sugar OR Stevia in the Raw
  • ¾ c. dark chocolate chips
  • ¼ tsp. salt
  • 2 T. cocoa powder

*tip: if using frozen raspberries, measure first, then thaw

Directions:

  1. Preheat the oven to 350 degrees.
  2. In a small saucepan or pot over medium high heat, simmer red wine until it reduces to ¼ c.  Afterward, remove from the heat until you need it later.
  3. Meanwhile, blend oats through ¼ c. raspberries in a food processor to make a crumbly crust mixture.  Coat a cake/ spring-form pan with cooking spray and press the crust evenly into the bottom.  Bake in the oven for 6-7 minutes.
  4. Clean any crumbs out of the food processor and add the eggs through salt to the food processor and combine.  Melt the chocolate chips, without burning them, by microwaving for about 20-30 seconds at a time and stirring in between each heating.  Once the chocolate is just melted through, slowly add to the food processor while running it.  Do the same with the wine reduction.
  5. Pour the chocolate batter on top of the crust and place on the center rack of the oven.  Bake until just barely done, about 30 minutes.  Allow to cool to almost room temperature before chilling completely in the refrigerator. 
  6. Best served cold, definitely best eaten any and all times afterward.

Makes 16 squares or slices
