I adore quinoa.  Mainly for two reasons.  One, it is an incredible, nutrient-packed ingredient.  And two, it’s like a blank canvas for cooking!  You can mix it up with just about anything and make it completely new.  I’ve already got a few that I have really liked in the past, but today, I thought it was time for something different.

A cold, fresh salad!  Just in time to beat the heat waves, too.  Come to think of it, if you’re starting your summer cookouts, bring a batch of this to the party for a great side dish.  Be sure to print out a few extra recipes if you do, though – you might get some more people wanting to make it!

Garden Quinoa Salad

vegan-friendly, gluten-free {makes about 8 servings}

Ingredients:

  • 1 cup uncooked quinoa
  • 3 cups low-sodium broth – chicken or vegetable
  • 2 T. lemon juice and zest*
  • ½ c. frozen corn
  • 1 T. olive oil
  • ½ medium cucumber, diced
  • ¼ - ½ c. chopped fresh cilantro
  • 1 Hass avocado, diced
  • ¼ red onion or 1 shallot, finely chopped
  • About 1 tsp. each (or more, to taste): garlic powder, onion powder, chili powder, cumin
  • About ½ tsp. each (more or less, to taste): salt, pepper

* I like to have tablespoons of lemon juice ready to go by freezing them in ice cube trays and storing in the freezer in a bag!

Directions:

  1. In a rice cooker or in a pot over medium-high heat, cook the quinoa in the broth, about 20 minutes or so, until cooked completely and fluffy.
  2. Transfer to a wide bowl where it can begin to cool.  (If you have frozen lemon juice cubes, these can help to cool the quinoa faster, too!)  Add in lemon juice and frozen corn and mix throughout the quinoa to help it cool.  You can also place it in the refrigerator for a few hours to cool it completely – you’ll want it to be fairly cool when you add the remaining ingredients.
  3. Add the rest of the ingredients, and mix well to combine.
  4. Enjoy as a side or a main dish!

Makes about 8 medium servings
