We live in a world of opinions. Because we have freedom of choice, disagreements among people have been flying around making things difficult since, basically, the beginning of time.
Still, while the world may not agree on many things, we do ALL agree on one thing. Cake is delicious. Everybody likes cake. Right? Even more than that, as one wise donkey said…
You know what ELSE everybody likes? Parfaits! Have you ever met a person, you say, "Let's get some parfait," they say, "Hell no, I don't like no parfait."? Parfaits are delicious!
Indeed they are. And no, I just couldn’t bring myself to do a post with a parfait recipe and not quote Donkey from the movie Shrek.
But now I have to say, “you know what ELSE is delicious? KIND bars.” KIND bars are really excellent, and if I have to have a meal on-the-go it’s hard to beat a KIND bar. I got a box of them recently, of all different flavors.
These particular ones were their newest line of Nut & Spice bars. Now let me tell you – they look small, but they are so crunchy and dense with nuts and deliciousness that by the time I finished it I felt pretty full! And this was after a boot camp class, for my first meal, too. Besides, I didn’t get hungry again for quite a while after that. That’s pretty odd for me. I think it must have been all that satisfying fiber and healthy fat – not to mention the sugar is so low in those bars that you could never crash from it!

Chili Chocolate Almond & Cantaloupe Parfait
vegan-friendly, gluten-free (makes 1-2 servings)
- 1 cup nonfat plain [or vegan] Greek yogurt
- About 2/3 scoop (25 g) vanilla protein powder of choice (I used Combat® Cookies and Cream from MusclePharm®)
- 1/3 c. diced cantaloupe
- 1 Chili Chocolate Almond KIND bar, chopped or crumbled into pieces
- Mix the Greek yogurt and the protein powder together. Put half into a bowl or glass.
- Top the first layer with half the cantaloupe and KIND bar pieces. Repeat with the remaining ingredients to finish the parfait.
Makes one meal (or two snacks – save half for the next day if you like):
Nutrition per meal: 460 calories; 18 g fat (3 g saturated); 31 g carbs; 6 g fiber; 48 g protein (Bonus: 40% vitamin A; 36% vitamin C; 36% calcium; 8 % iron)
Nutrition per snack: 230 calories; 9 g fat (1.5 g saturated); 15 g carbs; 3 g fiber; 24 g protein
