Happy National Peanut Butter and Jelly Day!

Lately, I’ve only been giving you posts on Mondays, Wednesdays, and Fridays, but today is just too special to pass up!  If you didn’t know, I’m a huge peanut butter and jelly fan.  I would follow it on a world tour if it did one.

My husband is an even bigger fan of it.  If he had a tattoo, it would probably be of a PBJ sandwich.  This, of course, only reinforces my obsession as it leads me to attempt all kinds of recipes using both peanut butter and jelly.

Thus, in honor of National Peanut Butter and Jelly Day (which truly does deserve a day of its own) I’ve compiled a list of my favorite PBJ recipes... PLUS, I’ve added a new one!  I think you’re gonna love it!

Power PBJ Cookie Dough Bites

gluten-free, vegan-friendly {makes 23}

Power PBJ Cookie Dough Bites Recipe (gluten-free, vegan) - FitCakery.com

Ingredients:

  • 1/3 c. ground flax seed
  • 1/2 c. (4 oz) peanut butter
  • ½ c. oats
  • 1/3 c. protein powder (any variety – vanilla, berry, OR peanut butter flavored)
  • 2 T. agave syrup/ honey/ maple syrup
  • 1 T. berry jelly
  • ¼ c. fresh berries (I used sliced strawberries)
  • 1/4 tsp. salt
  • 1 1/3 c. popped millet
  • 1/3 c. protein powder for finishing

In a food processor or stand mixer, combine ground flax seed through salt.  Mix in popped millet with a rubber spatula.

Put the remaining 1/3 c. chocolate protein powder in a wide bowl.  Using a tablespoon-sized scoop, scoop out truffles from the mixture and drop them into the bowl of protein powder.  Roll each one to coat.

Aaand they’re ready to eat!

Store the finished bites in a sealed container in the refrigerator for up to a week, or freeze.

Makes 23 rounded Tbsp. bite (about 0.6 oz or 18 g each)

Nutrition per bite: 80 calories; 4 g fat (1 g saturated); 8 g carbs; 1 g fiber; 5 g protein
