Sometimes, the entire first 15 minutes of my morning is spent lying half-awake in bed.  I’m trying to pretend there’s no such thing as having to get out of bed and be an adult.  Also wishing for the cat to have a snooze button.

This morning though, I got right up, stretched, put on my Fitbit (can’t let my family win!), made some coffee (to become a whole person), heated a couple of these delicious things for my hubby’s breakfast, and then whipped up a batch of Peanut Butter-Raspberry Swirl Bars.

Um, did you catch that?  All of that was the first 15 minutes of my day.  Quite possibly the first 10.

For one: Pre-made breakfast is a wonderful thing.  For another: Coffee machines with timers = making the coffee… when you can still think.  As in, the night before.  Oh, and: Easiest snack/ dessert/ birthday-cake-substitute.  Ever ever ever. 

I literally (yes, I literally mean literally) make this recipe more than anything else.  Just to give some perspective, I make it more often than I make pizza.  I have these recipes memorized. 

Peanut Butter Bars are my go-to for the fact that I can make them quickly, for lots of people (such as a cycling class!), they’re gluten-free AND vegan (so more people can enjoy it), they’re healthy enough to feel good about sharing with everyone, and they blow peoples’ MINDS that they’re SO tasty and… made of beans.

I don’t usually tell people about the beans first.

Anyhow – so important is this recipe to my life that I have decided, finally, to update the one I originally posted as a pizookie.  It’s just as good made into a giant pizza-cookie, of course, but I’ve tweaked the ingredients a touch to make the most excellent bars this side of the blogosphere.  It’s no big deal, it’s just the truth.

Peanut Butter-Raspberry Swirl Bars

vegan, gluten-free {makes 16 bars}

  • 1 (15-oz) can chickpeas (garbanzo beans) rinsed and drained
  • ¼ c. peanut butter
  • 3 T. ground flax seed
  • 2/3 c. brown sugar (or replace half with Stevia powder)
  • 1 ½ tsp. vanilla extract
  • ¼ tsp. salt
  • 1 tsp. baking powder
  • ¼ tsp. baking soda
  • 2 T. reduced-sugar raspberry jam (or your favorite variety of jam!)


Preheat the oven to 350 degrees F.

Prep an 8 x 8” pan (or with equivalent area) with cooking spray.

Place all ingredients except jam in a food processor, and blend very well, until completely smooth.  You may need to scrape down the sides partway through and blend more.

Pour the batter into the prepped pan.  Drop the 2 T. raspberry jam in four spoonfuls across the middle of the batter.  Swirl it in with a knife and bake for 30 minutes, until lightly browned on top.  Set aside to cool completely.

When cooled, cut into 16 bars.  Store at room temperature up to 3 days, in the refrigerator up to a week.

Makes 16 squares

Nutrition per square (including the 2/3 c. brown sugar): 96 calories; 3 g fat (0 g saturated); 16 g carbs; 2 g fiber; 3 g protein
