If you’ve ever ordered takeout or microwaved a frozen meal, you are well acquainted with the meaning of convenience food. 

If you haven’t, then I assume you are either very privileged or have been living under a rock in the Sahara desert.

Personally, I’ll admit – I know my way around convenience food.  

And yes… it’s what you’re thinking. 

Even when I say the words “convenience food,” thoughts of pizza, oily noodles, and chunks of reheated meat covered in brown sauce comes to mind. 

Why is that?  I guess that means I’ve had my share of quick-and-easy fare, too.

Still, after college, I decided I was going to try to figure out this thing called “actual cooking.” 

You know, getting more than two ingredients and putting them together so as to make a meal.  Maybe even devise a sauce or a pancake from scratch. 

It’s a whole new world when you can make a pancake from scratch.

As I soon learned, there are some really easy ways to make healthy food without spending an entire afternoon (or even more than 20 minutes) on a meal you can keep eating all week.

And you know what? 

There’s nothing wrong with wanting a little convenience, anyway. 

The idea that food can be good and tasty and quick does not actually have to clash with a healthy lifestyle.

Each of these recipes take less than 20 minutes to make, and they’re healthy. 

AND super convenient for faster-than-frozen meals later!

Did I mention they are really delicious and fancy-lookin’, too?  Like a little haute bistro meal.

Curried Salmon Salad

gluten-free {makes about 5 servings}

Ingredients:

  • 2 (6 oz) cans salmon*
  • 5 spears asparagus, roasted + sliced
  • ¼ c. crushed pecans or walnuts
  • 1 medium Hass avocado, peeled, pitted + mashed
  • ½ c. low or non-fat Greek yogurt**
  • 1 tsp. curry powder
  • ¾ tsp. each: garlic powder, onion powder, white pepper
  • ¼ tsp. salt
  • *preferably wild-caught
  • **or mayonnaise, or Veganaise for dairy-free version

Directions:

If you haven’t roasted the asparagus yet, put them (make a bunch to have extra ready!) in the oven on a baking sheet at 400 degrees F. for about 12-14 minutes.

In a large bowl, mix all ingredients together.

Chill until you’re ready to serve!

I recommend portioning this out to take as a quick, healthy lunch or a fun picnic meal!  Perfect in wraps, sandwiches, or salads.  Serve with Garlic-Rosemary New Potato Frites.

Makes about 5 servings.

Garlic-Rosemary New Potato Frites

gluten-free, vegan {makes 4-5 side-dish servings}

Ingredients:

  • Approximately 1 lb. new potatoes, scrubbed and washed
  • ½ c. extra virgin olive oil, divided*
  • 2 large cloves garlic, minced
  • 2 sprigs fresh rosemary, stems removed and minced
  • ½ tsp. each: sea salt and cracked pepper
  • ¼ tsp. each: garlic powder, onion powder
  • *used for pan-frying – not all will soak into the potatoes

Directions:

Place the washed potatoes in a wide, microwave-safe bowl, and fill with about ½” of water.  Microwave the potatoes until almost tender enough to eat, about 4 minutes.

Meanwhile, heat ¼ c. olive oil to medium-high in a large frying pan.  Don’t let the olive oil over heat or start smoking – it will only take a few minutes to get hot enough.

Place half the potatoes in the pan, but don’t overcrowd them.  (Take care not to splatter the oil on yourself!)  Smash each one with a potato masher or the bottom of a glass.  Roast the potatoes until browned on each side, about 2-3 minutes per side.

About 2 minutes before the potatoes are finished, add the garlic, rosemary, and salt. 

Remove the cooked potatoes to a bowl and finish with pepper, garlic powder, and onion powder.

Repeat with the remaining oil and potatoes.

Makes 4-5 side-dish servings
