Happy St. Patrick’s Day Eve!

I was in a celebratory mood today, so I thought I’d pop open a bottle of Guinness early.

Okay, so I don’t really drink Guinness.  As perfect as it would be to raise a glass of that to St. Patrick’s Day, I’m not a big fan of stouts.  It’s actually my husband’s favorite, so it’s not that I haven’t tried it, but… nope.  Just doesn’t do it for me.

Still, I can certainly appreciate the flavors without drinking it.  With its chocolate and coffee notes, it couldn’t be a more perfect addition to dessert!  These cupcakes make use of alllll that goodness, (minus the alcohol) leaving you with a delicious treat that everyone can enjoy! 

If you’re feeling extra celebratory, I’d suggest some cream cheese frosting to go along with it.  Perhaps an Irish cream frosting, if you know what I mean?  But, hey, you know what?  It’s delicious either way!

Side note.  Did you know that Guinness was once promoted as a healthy drink?  Doctors used to even recommend that pregnant mothers drink a pint of it every day!  That is a fact.  Strange but true.

And while I won’t attempt to make any case for drinking it for your health, I will say that it’s not the worst beer you can drink!  It’s actually one of the lowest in calories, carbs, and even alcohol of beers.  So, you know, if you like it, you have those tidbits to add to your reasons to appreciate Guinness!

Speaking of facts, according to the Guinness World Records, the largest cupcake ever made weighed 2,594 pounds!  I hope it made 3,000 servings…

Guinness Cupcakes with Irish Crème Frosting

vegan-friendly (using coffee instead of Guinness) {makes 18 cupcakes}

Ingredients:

Cupcakes:

  • 12 oz (1 bottle) Guinness stout beer*
  • 4 oz vegetable oil – use one with a light flavor, like avocado oil, canola oil, or a nut oil
  • ½ c. pumpkin puree (or other fruit puree, such as apple sauce)
  • 1 c. brown sugar/ sugar substitute (I used ½ c. brown sugar, ½ c. Stevia in the Raw)
  • 2 tsp. vanilla extract
  • 3 oz dark chocolate chips, melted**
  • 3 c. whole wheat flour (pastry or regular)
  • 1/3 c. cocoa powder
  • 2 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt

Frosting:

  • 8 oz vegan or regular cream cheese – (I used Tofutti)
  • 2 tsp. vanilla extract
  • 2 T. Irish whiskey (optional)
  • ½ c. powdered sugar (or equivalent sugar substitute)
  • I also snuck in 3 T. of cookies & cream flavored protein powder, too! (This is optional, but I love the added flavor and bit of protein!)

Directions:

Preheat the oven to 350 degrees.

Coat 2 (12-muffin) muffin pans with cooking spray. 

Combine Guinness through melted chocolate thoroughly, in a large bowl or mixer.

In another bowl, whisk together flour through salt.  Add the dry mixture to the wet, combine, and use a rubber spatula to scrape down the sides of the bowl to make sure everything is incorporated into the mix.

Portion 18 cupcakes out evenly into the prepared pans.  Bake the muffins for about 24-26 minutes until the tops spring back a bit when touched. 

Cool the muffins in the pans a few minutes before removing to a wire rack to come to room temperature.

Meanwhile, thoroughly combine all the ingredients for the frosting.  When the cupcakes are cooled, frost the cupcakes, and refrigerate until serving!  Alternatively, refrigerate the frosting, and use when you’re ready to serve!

Makes 18 cupcakes

Nutrition per cupcake (using ½ c. sugar + ½ c. stevia powder): 181 calories; 8 g fat (2 g saturated); 25 g carbs; 4 g fiber; 3 g protein

Nutrition per cupcake with 1/18 batch frosting (using Tofutti + including reg. sugar + whiskey) each: 219 calories; 10 g fat (2 g saturated); 28 g carbs; 4 g fiber;

*for vegans, or anyone who doesn't like the Guinness, try this with brewed coffee instead! It tastes very similar and works really well!
