I’m going to start this roundup post with three facts about myself:

One.  A good portion of my ancestry is Irish.  I don’t personally know any of the family that still lives there, but I listen to Celtic music a lot, as if it will bring me back to my roots.  (“Celtic” is legitimately a Pandora station I created and saved as the homepage of my computer.)

Two.  I spent two lovely weeks in Ireland in June of 2011.  I saw so many happy looking people and animals there.  I could practically live on the dense, grainy bread we ate everywhere we went.  And I did kiss the Blarney stone.

Three.  I like to eat like a human being – which is to say, I like to eat tasty, visually appealing things.  Of course, I also like to eat healthy things.  I’ll rarely eat something that has ZERO nutritional benefit for me… even less so if it’s the kind of thing that will also end up hurting me!  You know, like potato chips, soda, jelly beans…?

You probably already figured about that last one though, didn’t you? 

Well, today I want to put those things together a bit.  Good-for-you meets celebration of all things Irish.

To get us the most out of this combination, I combed the interwebs to find all the healthy recipe gurus out there – then I put together a list of 5 of the most delicious/ awesome/ healthy ones for St. Patrick’s Day that I could find on their sites.  This is that list. 

Okay, one of them is mine… I really wanted to contribute something, too!  But, believe me – if you make it, you will be BLOWN AWAY.  It’s crazy.  Anyway, the other four are 100% winners, and I can’t wait to make and eat them all up!
