Happy Monday!

No, I am not being sarcastic.  It’s true I’ve never been the biggest fan of Mondays.  I’m actually more of a Tuesday person.  But it IS a happy Monday, because I had a really great weekend. 

Still not following?  Well, think about it.  When you have a really great weekend – and by really great weekend I mean spending lots of time with friends and possibly indulging in a wee cheat meal or two – Mondays are always going to be there for you.  And by there for you, I mean to whip you into shape.

Mondays are the no-nonsense, power-suit, tight hair-bunned day if there ever was one.  Mondays would be called Helga.  Helga does not accept sloppiness.  You will tell Helga you’re ready to come back to reality and do better this time and continue to improve. 

Stop me if I carry this analogy too far…

I’m just going to assume you get me, here.  Even though Mondays are not the most desirable or fun day of the week, and we may not look forward to them, they offer a chance to get back on track.  Or else. 

I was thinking about that as I rolled out of bed this morning.  That I could choose to either feel terrible about some of the dietary choices I made this weekend, or I could be proud of myself for making it to the gym twice – and then decide to move forward and do amazing things today.

On that train of thought, I figured that nothing could get us on track to a great week like lots of healthy protein and fat – two important components of a slimming (and satisfying) meal.  Because if we swing too far the opposite way of the weekend, picking at some dry salad or watery soup all day, we set ourselves up for cravings – and give in to temptation by Wednesday!  Let’s not do that.

You can probably tell right off the bat that this dish will be low-calorie thanks to all the veggies, satisfying and nutritious because of the avocado, and filling and slimming due to the protein.  But there is more to it than meets the eye. 

The anti-inflammatory nature of the raw garlic and onion is excellent for balancing out after an indulgent weekend.  These, along with the vinegar, help cleanse and rejuvenate your system, while stabilizing blood sugar to help you stick to your Monday-guns longer.  Shazam!

So let’s get prepped for the week with this ready-to-grab chicken salad and embrace the Monday.  Helga really just cracks the whip because she wants you to succeed, after all.

Chicken and Red Cabbage Salad

Gluten-free {makes 6 - 8 servings}

Ingredients:

  • 2-3 minced cloves garlic
  • 1 medium Hass avocado
  • 1/3 c. plain nonfat Greek yogurt
  • ¼ tsp. each salt, garlic powder
  • ½ tsp. each pepper, onion powder
  • ½ small head red (8 oz) cabbage, chopped
  • ¼ large chopped red onion
  • 1 lb. chopped cooked chicken breast
  • ¼ c. chopped walnuts
  • 3 T. white wine or apple cider vinegar

Directions:

In a large bowl, mash the first five ingredients (through all the seasonings) together with a fork until there are no more chunks of avocado left.

Mix in the cabbage through vinegar and fold everything together. 

Taste test for seasoning, and add more of anything you like. 

Serve immediately or chill up to 24 hours before serving.  Great in wraps or on salads!

Keeps in the refrigerator 5-7 days.
