Right.  It’s been just about three years since I started this blog.  I’ve enjoyed sharing my discoveries in the kitchen with you, most of which involve experimenting with strange and foreign ingredients (ie., yogurt, almond flour, avocados, etc.) to “magically” make delicious things healthy.

If you’ve stopped by before, you probably know that I sprinkle in health/fitness tips here and there among my recipes.  This is because the world would obviously be a better place if chocolate and health were not mutually exclusive. 

I mean, have it all, why don’t you?  That’s not too much to ask.

Speaking of chocolate – which is always – it really SHOULD be seen as a supplement to health… not the arch-nemesis of it.

(You’re on board with this.  I can just tell.) 

Cocoa is filled with flavonoids and anti-oxidants that your body loves.  Cocoa is AWESOME for you.  What is not awesome for you is gobs of processed white flour, sugar, and preservatives.  Can you see how boxed-mix or store-bought brownies are giving all brownies a bad rap?  What a shame.

But you know what?  I do not believe we have to make a compromise here. 

We can have the healthy cocoa.  Moreover, we can have it in the form of a brownie.  A real, rich, decadent brownie.  And it can be easy.  AND it can be healthy. (I’m talkin’ just 3 g net carbs healthy!)  Plus, it has the benefit of heart-healthy beets – lots of them – and NO ONE CAN TELL!

I’m also glad to say that Cynthia Sass, MPH and RD, the author of a great healthy-eating book, Cinch!, also believes in eating chocolate every day.

Fudgy Beet Brownies

gluten-free {makes 18 brownies}

Ingredients:

  • ¾ c. almond flour
  • ½ c. coconut flour
  • ½ c. cocoa powder
  • 1 ¼ c. stevia powder
  • 1 (15-oz) can beets, with water
  • ½ scoop (about 18 g) of your favorite protein powder (optional)
  • ¼ c. ground flaxseed
  • 2 tsp. instant espresso powder
  • 1 tsp. ground cinnamon
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • 1/3 c. butter, melted
  • 2 tsp. vanilla extract
  • 1 egg
  • 1/3 c. mini chocolate chips (optional)

Directions:

Preheat the oven to 350 degrees F.  Coat two 8 X 8” pans with cooking spray.

Put almond flour through melted butter in a food processor and blend until thoroughly combined.  Scrape down sides with a rubber spatula.

Add egg and blend for a few seconds.  Scrape down the sides again.

Add the mini chocolate chips (if using) and pulse the food processor a few times just to distribute them throughout the batter.

Scrape all the batter into the two pans.  Place them both in the center of the oven and bake for about 25-30 minutes, until baked through but still slightly moist in the center – they will set a bit more as they cool.

I highly recommend eating some as soon as they won’t burn your mouth, but can be eaten at room temperature or cold! Store at room temp up to 3 days, or in the refrigerator 1 week.  (But who am I kidding?  They’ll be long gone before then!)

Makes two 8 x 8” pans of 9 brownies each

Nutrition per brownie, optional ingredients not included: 97 calories; 7 g fat (3 g saturated); 6 g carbs; 3 g fiber (for 3 g net carbs); 3 g protein
