Well, on the 4th day of Christmas, Courtney got a little behind on her Christmas posts.
With all the Christmas and graduatuation parties, the realization that Christmas shopping is still looming (uh, yeah...), and some serious cookie baking for friends and family, it all caught up with me. I've been enjoying writing each post immediately before posting, because who knows what interesting thing might pop into my head in the rush to get it written? ...Or is that what they call procrastination? Hm...
But the important thing is that they're here. 4 of the best healthy-yet-super-decadent desserts. Even though we only have THREE more days till Christmas now. (DON'T PANIC! This is supposed to be a good thing!) You'll still get three more days of Christmas recipes though!
This is basically just going to mean actually receiving a Christmas Day post, instead of wrapping up (haha..) the 12 Days of Christmas on Christmas Eve. Seems appropriate, too, when you think about it. So don't forget to check back sometime amid all the festivities so you don't miss my gift to you!

These peppermint patties are simply gorgeous, dahling... I'm not sure whether I would want to eat these as soon as they were set or show them off first. Or both. Wait - what about this - I'll make a batch for me, eat that, and then make a couple batches to give as Christmas gifts? With ingredients this great and instructions this simple, I think this one is a winner!

While the pumpkin-spice lattes, affectionately dubbed the PSL by afficionados, seem to get all the attention the moment the fall season saunters in, peppermint lattes are the queen of the cafe in winter. Those are my conclusions, at any rate. It would stand to reason, then, that these scones are the wintertime kings of the kitchen, no? If you're not convinced, more reasons that this recipe reigns are: soft, fluffy pastry-texture; 100% whole wheat; hint of mocha flavor; super easy to make; vegan-friendly; and did I mention... peppermint?

I've always felt that marshmallows as a store-bought commodity were somewhat questionable. Like, what are they even made of? Okay, it's mostly just sugar, I know, but they're just a little weird when you think about it. Right?
With this recipe, the fact that you can make them from scratch sounds AMAZING! I'll definitely be trying this simplistic-looking recipe soon, which is sure to become a staple during the colder months! Also, how insanely cute are these? Can you say, great for gifts?!

This is truly health-food in disguise. How you can get ALL those superfoods into something that looks THIS good is unbelievable. This is probably bound to be one of the best desserts you could eat/feed picky-eater children/husbands/etc... They are also packed with protein and avoid a lot of common allergens!
