This is the happiest crepe in the whole wide world. You know why? Because it’s hugging its three best friends.
Isn’t that the best thing in life, after all? Best friends? Especially when hugging. Hugging and friendship are what make the world a better place.
Anyway, if crepes had best friends, pear, honey, and goat cheese would be the best of the best friends. Like, 4-Evahs. If three of them were without the other, it just wouldn’t be the same.
Happily, I know how this crepe must feel. I am in a situation that involves having a number of BFFs, too. Lunch dates, sleepovers, and sharing cookies included. Sadly, one of these besties is leaving soon! It’s like the honey is getting taken away from the crepe-party. Unheard of. Unspeakable.
I’m wonderfully happy for her – she is moving off to LA to continue to do amazing things and be a fantastic human being – but at the same time, I, and practically the whole rest of the city, will lose a major percentage of its delightfulness. The overall volume of silly songs, witticisms, sweetness, and whimsy will decrease. I will have to eat pineapple pizza all by myself.
While she is out there in the world, though, I know she’s gonna really rock it. If I win all my bets, this girl’s going to win a Nobel prize for world peace, make a million more people happy, crack a few well-timed corny jokes, and be a major BA in life in general. Sock it to ‘em, girl!

Speaking of which, I am definitely of the opinion that these crepes will help us do that. Elastic, eggy crepes are the perfect wrap for sweet and mellow pears that love the tangy, ultra-creamy goat cheese and nature’s sweet honey. It was so delicious it warmed my heart and went all the way to my toes.

Pear, Honey, + Goat Cheese Crepes
Makes 8-10 crepes
1 cup flour (all-purpose or half ww pastry and half all-purpose)
1 ½ c. almond milk or nonfat milk
¼ tsp. salt
2 large, ripe pears – I like Anjou – thinly sliced and quartered
1 4-oz container crumbled goat cheese
Honey for drizzling (about 2-3 tsp. per crepe)
Place all crepe ingredients in a blender and blend just until no clumps remain.
Heat a small non-stick sauté pan on the stove over medium high heat and spray with a canola or vegetable oil cooking spray.
Immediately pick up the pan and tilt slightly to one side. Pour some of the batter on the pan while rotating the pan with your wrist to cover the entire bottom of the pan in an even coat.
Replace the pan on the stove and cook the crepe about one minute. The edges will start to curl up and the top will look opaque. Flip the crepe – if you can do this by simply flicking your wrist, I am impressed and jealous – or you can break out a large spatula and flip it my way – er… that way.
Cook about 30 seconds longer, or until done, and slide onto a plate. Repeat, placing a sheet of wax paper in between each crepe to keep them from sticking.
Divide ingredients among crepes, roll each one up, microwave about 10-15 seconds, just until heated through, and serve it up hot!
