I have a cat and a dog.  They're adorable.  Furballs that poop and shed, but adorable and loveable nonetheless.

That's as close as I have gotten to motherhood, and from what I understand, there is a lot more involved in parenting than making sure that your "baby" gets outside and has plenty of belly rubs.

You probably know where I'm going with this.  It's Mother's Day this coming Sunday, and it's always the least I can do just to acknowledge that I know nothing of the trials my wonderful mom went through for me, and to say THANK YOU, ever so much for going through them.  I don't even deserve any of it, but she did it all out of wonderful, motherly love.

My mom taught me how to be a kind person, how to cook, and how to not also eat the mud pies I made as a toddler.  I'm so glad I make better things than mud pies now.

Mini Churro Cupcakes

Great things come in many sizes.  The Great Wall of China, for example, is super-duper large, while the key to a penthouse suite is a speck in comparison.

Not all great things are alike, of course, but the fact that we perceive something as great is what’s important.  Don’t you think?  I can’t compare food to the Great Wall of China, but then again, you can’t eat the Great Wall of China.

Really, what I’m trying to say is that these teeny little cupcakes, after a few trial-and-errors, have finally come to be something totally great in my world!  They’re just SO fluffy and cinnamon-y.

When I was developing the recipe for these, I was inspired by a friend of mine at this fantastic little sandwich cafe called Latin it Up (here in Tucson,) to try to make a Latin-ish dessert.  I’m not Latina, and I’ve never made flan, but I love churros!  Anything cinnamon is just the best.

Since churros are typically fried, I wanted to create something a little more in line with my healthy cooking tendencies.  Hence, baked churro cupcakes!

Strawberry Orange Cupcakes

Dear Springtime,

I thought it would be great if I could let you know what you mean to me.  It’s really delightful when you’re around, and not every season makes me really want to go outside like you do.

Sure, there tends to be a lot of wind, pollinating flowers that make my nose itch like crazy and my eyes turn red, and some extra anxiety concerning taxes, but it’s really all worth it when I think about all the fabulous benefits you bring us.

Besides lovely picnic/ hiking weather, a plethora of outdoor festivals (I love festivals!), and baby animals, all the fresh fruits and vegetables that spring up (pun intended) in farmers’ markets/ gardens/ stores/ etc. make me want to really get baking!

These fresh strawberries you’ve brought have been a complete inspiration.  I mean, eating plain strawberries is great, don’t get me wrong – but there is a LOT you can do with strawberries.  Of course I had to make something fun with them!  And those oranges still on the tree were also begging to made into something other than juice, you know?  So Strawberry Orange Cupcakes pretty much had to happen.

Rhubarb Chevre & Peanut Butter Cookie Icebox Bars

All I know is these are something different.

I had a really hard time deciding what to call them, because they’re like half cheesecake and half ice cream bar…. and half peanut butter and jelly sandwich.

They’re also high in protein, gluten-free, low-carb, and can’t really be eaten without a fork.

So what do you call that?

I guess the only thing that could sum it all up without being in paragraph form was Rhubarb Chevre & Peanut Butter Cookie Icebox Bars.  So there you have it.

To me, this is the dessert-embodiment of all the best things.  All the flavors and textures of my favorites went into this, sans the sugar-overload I would rather avoid but with the metabolism-boosting, muscle-fueling protein I need for my training!

It kinda even gives me a sneaky satisfaction at the thought of thwarting the traditional “sweets-are-bad-for-you” train of thought.

These are something different, all right!  But in this case, different really just means delightful!  Don’t you think?
