Am I the only one who thinks food should look good? 

Yeah, I know – what kind of question is that, anyway?  Of course I’m not the only one.  I’m sure you wouldn’t be reading a food blog if you didn’t like the way food looks in pictures and you want to make appealing food, too!  But even when you’re at home by yourself, not trying to impress anyone with your culinary masterpieces… don’t you still prefer to eat something that looks good?

Sure, you’ll never get a bowl of plain cereal to look much different than, well, a bowl of cereal, but that’s beside the point.  Even when I’m by myself, as long as I have enough light to see – and I haven’t had a power outage in a long time, thank goodness – I love making my food colorful and tasty-looking.

Have you ever been to the grocery store or some marketplace with a serious seafood spread laid out and seen something you couldn’t resist?  Like a glistening pink-striped salmon fillet that looks perfect for grilling, or a bunch of succulent giant scallops for serving with roasted broccolini?

Whenever I see some really thick, plump white fish, I always think of ceviche.  Unfortunately, where I live in Arizona, it’s not always reasonable to expect the best of the best when it comes to seafood selections.  So when I go somewhere and find some amazing-looking fish, I know it’s gotta be time for something epic.

In a perfect world, there would be no tough decisions.  Mint chocolate chip or rocky road?  Hiking or swimming?  The pink or the teal dress?  Sweet or savory?
