Plantain Tostadas and Tortillas

Plantain Tostadas and Tortillas

Hi there!  Long time no see… it’s been a bit since my last post!

If you’d like a small explanation as to why the giant chasm of time since I last posted… well, I suppose life happened.  I was still going through health issues – very autoimmune-disease-like health issues, involving some intense inflammation and such – as well as a bit of relationship and work changes, which didn’t really leave me much time for focusing on the blog.  Most of that seems to be quieting down for now, so here I am!

You still wanted that recipe for Plantain Tortillas, right??

Anyway, I’ve missed it… and I still want to attempt to post here from time to time!  I really love sharing recipes and health information with people, and it’s important to me to be able to do that.  If you’re reading this, feeling a bit like I’ve been a real fair-weather friend here for the last year, please feel free to reach out to me!  There is a contact page here for ya.

Now.  On with the show!

Without further ado, let me introduce my FAVORITE recipe of the past year, with my FAVORITE accompaniments ever!

Mini Churro Cupcakes

Mini Churro Cupcakes

Great things come in many sizes.  The Great Wall of China, for example, is super-duper large, while the key to a penthouse suite is a speck in comparison.

Not all great things are alike, of course, but the fact that we perceive something as great is what’s important.  Don’t you think?  I can’t compare food to the Great Wall of China, but then again, you can’t eat the Great Wall of China.

Really, what I’m trying to say is that these teeny little cupcakes, after a few trial-and-errors, have finally come to be something totally great in my world!  They’re just SO fluffy and cinnamon-y.

When I was developing the recipe for these, I was inspired by a friend of mine at this fantastic little sandwich cafe called Latin it Up (here in Tucson,) to try to make a Latin-ish dessert.  I’m not Latina, and I’ve never made flan, but I love churros!  Anything cinnamon is just the best.

Since churros are typically fried, I wanted to create something a little more in line with my healthy cooking tendencies.  Hence, baked churro cupcakes!

32 Kickoff Recipes for Superbowl Sunday!

It’s hard to believe it’s Superbowl time again!  Some things, like the big game, always come around and make you wonder where the time has gone.  And yet, so many things can change in that time!

If there is one thing I’ve learned over the past year, it’s that life will surprise you.  We can plan all we want for a future we hope for, but in the end, the outcome of our decisions can go any which way.

Spoiler Alert: My Cookbook is Out!

Spoiler Alert: My Cookbook is Out!

Ever get that feeling of being totally owned by your schedule?  Kind of like being tied to the back of a rampaging gorilla that’s really not cool with you being tied to its back?

Sometimes this feeling occurs to me.  It probably means I need a self-help book on time management.

Anyway, this is the part where I announce to you the wonderful reason I’ve been so terrible at posting anything consistently for a while…

Ladies and Gentlemen, I am so very pleased to announce that today marks the official date that my very first cookbook is released!

YAY.

I know I’ve been talking about it a bit, but this is kind of a lifelong dream come true here!  And I can tell you, it’s only the first big thing I’ll do this year.

(Also – today 1/12/16 is the last day… but you can still enter to get my book FREE through this page here!)
