Beef and Butternut Stew

Apparently there is such a thing as “stew season” and it is coming to a close, according to various sources such as the food magazines I read in grocery store checkout aisles.

I’d like to point out that, no matter what season it is, smack dab in the middle of winter or a sunny summer day, sometimes, I still like to have a hot meal here and there.

I mean, yeah, it’s not freezing out – our cold spell lasted all of two weeks this year, anyway – but that doesn’t mean that I shouldn’t make something delicious out of these wonderful ingredients that just happen to go so well together.

Seriously.  Do you even know about beef and butternut squash and peas and sage?  They’re like a fantastic four of the food world.  They kick some serious tastebud together.  

I had to share it with you now, because, well, you need this in your life.

Besides, it’s kind of St. Patrick’s Day today, and I think I’m somehow celebrating my heritage by way of making a stew in mid-March!  Does that make sense?

Anyway, all I know is, when you make a batch of this, you’ll either have a week of delightful meals for yourself or a really pleased family to serve this to!

Anyway, this is the part where I announce to you the wonderful reason I’ve been so terrible at posting anything consistently for a while…

Ladies and Gentlemen, I am so very pleased to announce that today marks the official date that my very first cookbook is released!

YAY. 

I know I’ve been talking about it a bit, but this is kind of a lifelong dream come true here!  And I can tell you, it’s only the first big thing I’ll do this year.

'Tis the season for family gatherings and good food!  Unfortunately, for many of us, it’s also the season for sniffley noses and baggy eyes… Precisely the time for a bit of a nutritional pick-me-up.

I’ve personally been noting the seasonal transition by the number of people around me with colds and the increasing difficulty of getting out of bed at a “reasonable” time.  It doesn’t help that I’m overcompensating with caffeine to the point that I can’t sleep properly at night, simultaneously exacerbating my problems with getting stuff done and avoiding the plague that the masses keep bringing around.

Sweet Potato-Pesto Hash Stuffed Peppers with Cashew Cream

When food catches me off guard by being extremely delicious, I find it much more gratifying than if I had been prepared for it to be that good.  That’s what makes seeking out new restaurants and constantly creating new recipes so appealing to me.  And it is what made my trip to Prasad an eye-opening and revitalizing experience, reminding me of how completely satisfying a well-prepared vegan meal can be.

Last week, I took my first solo vacation.  It was to somewhere I’d never been, but had always wanted to go – Portland, Oregon.  

I think my expectations of the city had just been accumulating over time, from friends who had visited some of the many epic breweries there, or whose aunts cultivated massive personal gardens in the area, from magazine articles touting the burgeoning culinary scene, and even quirky TV shows that poked fun at the laid-back hippy/hipster vibe Portland is reported to exude.

All of it made me want to go.
