Matcha Green Tea Power Balls

Matcha Green Tea Power Balls

Let me just start off by saying that matcha green tea is one of God’s great gifts to humans.  As humans, we tend to be imperfect and, as a result, reliant on what resources we are given to thrive.  In our imperfection, though, we often seek out the stuff that provides us with instant gratification rather than long-term vitality.

(And, yes, I say this as I am eating cheese-flavored popcorn.  I’m just a weak human?)

But, in some cases, we can get that instant gratification (think caffeine boost) with benefits that can help clean up our act, health-wise (think antioxidants).

So before you write off matcha green tea as coffee’s less exquisitely caffeinated substitute – you’d never do that anyway, right? – let me give you a little 5-point profile of my latest fave, the powerful matcha...

There are really zero excuses for not making coffee cake for a Sunday morning treat.  None.

Especially when you consider that this version of my delectable Fig-Walnut Coffee Cake is pretty dang good for you.  With all the extra protein, top-notch ingredients, and its superhero-like power to work with most dietary needs, you basically just have to make it.

You’ve been using your willpower all week long, right?  Avoiding the doughnuts at work or the cookies your kids eat at home and making sure you eat your veggies and drinking water instead of something else – of course you could be all will-powered out by now.  But if you have to give in, you don’t also have to feel guilty about it!

That’s why I put together this cake recipe.  So you could have it, and eat it, too!

Flourless Lemon-Orange Coffee Cake

Flourless Lemon-Orange Coffee Cake

I have a cat and a dog.  They're adorable.  Furballs that poop and shed, but adorable and loveable nonetheless.

That's as close as I have gotten to motherhood, and from what I understand, there is a lot more involved in parenting than making sure that your "baby" gets outside and has plenty of belly rubs.

You probably know where I'm going with this.  It's Mother's Day this coming Sunday, and it's always the least I can do just to acknowledge that I know nothing of the trials my wonderful mom went through for me, and to say THANK YOU, ever so much for going through them.  I don't even deserve any of it, but she did it all out of wonderful, motherly love.

Strawberry Orange Cupcakes

Strawberry Orange Cupcakes

Dear Springtime,

I thought it would be great if I could let you know what you mean to me.  It’s really delightful when you’re around, and not every season makes me really want to go outside like you do.

Sure, there tends to be a lot of wind, pollinating flowers that make my nose itch like crazy and my eyes turn red, and some extra anxiety concerning taxes, but it’s really all worth it when I think about all the fabulous benefits you bring us.

Besides lovely picnic/ hiking weather, a plethora of outdoor festivals (I love festivals!), and baby animals, all the fresh fruits and vegetables that spring up (pun intended) in farmers’ markets/ gardens/ stores/ etc. make me want to really get baking!

These fresh strawberries you’ve brought have been a complete inspiration.  I mean, eating plain strawberries is great, don’t get me wrong – but there is a LOT you can do with strawberries.  Of course I had to make something fun with them!  And those oranges still on the tree were also begging to made into something other than juice, you know?  So Strawberry Orange Cupcakes pretty much had to happen.
